Canapes (from the French canape - “tiny”) are small sandwiches 0.5–0.8 cm thick, 3–4 cm wide or in diameter, prepared on any bread or biscuits with a wide variety of ingredients. Typically, canapés are mini sandwiches placed on skewers. They are easy to prepare and always look beautiful among other dishes.

We are in website We offer you several ideas on how to prepare canapés that will pleasantly surprise your friends and family.

Canapes with cheese

It is difficult to imagine a canape without cheese, almost as well as without a bread base. And all because you can combine a large number of different ingredients with it.

  • The simplest and most delicious option. Cheese, vegetables or fruits. Easy to make and looks gorgeous! The best combinations are cheese, grapes; olives, parsley, hard cheese; Cherry tomatoes, basil, cheese.
  • Fried cheese. It's unusual and very tasty. Cut the cheese (preferably suluguni) into 2–2.5 cm cubes and roll in wheat flour. Separately, beat 2 eggs with 2 tbsp. l. milk. Dip the cheese cube into the egg mixture, then roll in cornmeal. Fry the cheese in a saucepan with plenty of butter until a nice brown crust forms. Remove and dry on a paper towel. The resulting cubes can be threaded onto skewers.
  • Cheese rolls. You can wrap various fillings in thinly sliced cheese slices and pierce the top of the roll with a skewer.
  • Cheese cream. Beat one or two types of cheese with yogurt (not sweet) until creamy; you can add any herbs, garlic or nuts. Place the resulting paste on a slice of bread for canapés.
  • Cheese balls. It looks very festive, and is not as difficult to do as it might seem. Mix low-fat cottage cheese with soft cheese in a ratio of 1:2. Roll into balls, roll in hard cheese, grated on a fine grater, or in chopped dill, or in pureed egg yolk (boil the egg!). Another option: Grate 100 g of any hard cheese and 1 boiled egg, combine with 1 tablespoon of mayonnaise. Roll into balls. Roll as in the first option.

Canapes with shrimps

Canapés with shrimp look very festive, bright, and they are no less tasty. In addition, they turn out to be very interesting if you use your imagination.

  • Marinated shrimp. In a separate bowl, mix 2 tbsp. l. vegetable oil, 2 tbsp. l. wine vinegar, chop a clove of garlic, add salt and ground black pepper. Boiled shrimp should lie in this mixture for 30 - 40 minutes. Pin with a skewer to a slice of cucumber or celery.
  • Canapes with shrimp, bacon and pickled peppers. We put the canapés in this order: a slice of white bread, rolled bacon, a piece of fried pickled pepper, a thin piece of cheese, a shrimp. Before serving, place in the preheated oven for 3 minutes.
  • Canapes with shrimps on a cream pillow. Cream option: in a separate bowl, make a mixture of 200 g of natural yogurt, 1 fresh cucumber and 1 clove of garlic (chop everything very finely), add salt to taste.
  • Canapes with duck breast. Sprinkle the duck breast with salt and pepper and bake in the oven until done. Cut into thin slices only after complete cooling. Wrap a slice of ripe persimmon in duck meat. Decorate with berries (blueberries, cranberries, raspberries) and a mint leaf. We pierce all this with a skewer.
  • Canapes are an ideal appetizer for a buffet table

Canapes are a typical buffet dish. Usually canapés are prepared in huge batches - ten pieces per person - and the preparation takes a lot of time. But it’s worth it - bright, varied sandwiches will decorate any table, and they can be made to suit every taste. Canapés are also good because you can start not only a buffet with them, but also any dinner party or lunch. Among culinary experts, canapes are considered a fairly democratic snack option, and provide the opportunity to endlessly experiment with the shape and filling of small sandwiches. But, as in any job, preparing canapés has its own subtleties and tricks, rules and principles, which we will tell you about.

    What is a canapé?

Canapés are small one-bite sandwiches, weighing no more than 50-70 grams. The task of a canapé, like any self-respecting snack, is to stimulate the appetite with its appearance and taste. They prepare mini-sandwiches with a variety of fillings, simple and multi-layered, on a base of crispy crackers and toasted bread, sweet, spicy, hot, salty, vegetable and fruit. As a spread, use butter with fillers or put a thick layer of pate. Canapés are complemented with sprats, boiled chicken, bacon, fish, cheese, caviar, olives, fresh or pickled vegetables, mushrooms, fruits, herbs.

    Canapes - cooking rules

Canapés differ from ordinary sandwiches not only in their miniature size, but also in the method of preparation and serving. Canapés are prepared from those products that the budget allows, and of course, taking into account what mini-sandwiches are prepared for. However, with all the wealth of choice, there are mandatory components in the canapé preparation technology - olives, cheese and grapes. It is these products that complete the composition and give a bright, rich taste.

The basis for canapés can be dried bread - white or black, unsalted crackers, chips with a neutral taste, or regular bread, but not soft, but already stale. If you plan to prepare canapés based on bread, then you need to buy it two days before the planned celebration and store it in the refrigerator, wrapped in a damp towel. This bread cuts well and holds its shape.

For classic canapés, take a long baguette, cut off all the crusts from it, cut the crumb into pieces of different shapes 0.5 cm thick, or cut out figures using cookie cutters. Add a few drops of olive oil to each piece and dry the bread in the oven for several minutes at 200 degrees. The main thing is not to dry out the bread. As soon as it becomes slightly golden, you need to take it out and cool. Now you can start building mini sandwiches. You can see the filling options

    Canapes - serving rules

The canape goes into the mouth whole, without biting off a piece. Therefore, the chef’s task is not only to successfully select a combination of products and beautifully arrange the appetizer, but also to present a culinary “construction” so that guests can taste the appetizer without losing some of the ingredients during the tasting and without getting their hands dirty. To do this, an intricate pyramid is attached to a skewer, carefully piercing it through the entire composition. Canapés are served on a flat dish or on a dish with legs, and to make the presentation elegant, canapés with the same filling are laid out in strips diagonally.

What is a canapé? These are small and very tasty looking sandwiches. You can give them any shape using trimmed molds and even a pastry syringe (you will find an example in this article), and fasten small pieces using multi-colored skewers.

It’s hard to even imagine a more elegant dish than a dish with beautiful (and, mind you, very tasty!) canapes. Children adore them, so for children's parties canapés will be the best choice for the central dish on the festive table.

But adults also love this wonderful snack - it looks appetizing, the flavors are very diverse, and there is no risk of overeating - because the canapés are very small in volume. Therefore, on any holiday table, not to mention New Year’s, a dish with canapés must be placed.

But you will also have to tinker with the preparation. There is no particular difficulty, but everything needs to be done carefully; by the way, you can invite children to cook - for them, collecting colorful canapes will be like an exciting game. After all, in essence, a canape is a construction set, and products are its parts.

All that remains is to assemble our food structures so that everything looks appetizing and beautiful, as in the photo below.

Today we’ll look at 7 simple recipes for delicious and beautiful canapés. So let's get started.

Cherry tomatoes are an ideal product for creating canapés, small and appetizing. We will also need wheat croutons (you can buy ready-made ones, or you can dry them yourself; if you don’t like croutons, just cut pieces of white bread). Parsley sprigs, mustard and thin slices of smoked bacon.

Assembly is very simple. Spread a slice of bread with mustard, roll up the bacon and place it on the bread. Place a sprig of greenery on top and press with your finger. The tomato, already strung on a skewer, is pricked at the top. All! The first one went...

For this type of canapé we will need pieces of white loaf, thinly sliced ham, round cucumber slices, small canned champignons and mayonnaise with eggs (grid the white and yolk separately). Yes, there is also a green note - a sprig of parsley.

You will also need skewers and a cookie cutter; we will use it to cut out the base of the bread. One piece of loaf makes 2 canapé bases.

Thread a small champignon mushroom onto a skewer in advance. Place a slice of fresh cucumber on a piece of figuratively cut loaf.

It is better to buy bacon in slices or ask the store to cut a whole piece for you, since it is unlikely that you will be able to cut it evenly and thinly yourself. Place half a spoonful of mayonnaise and grated egg white on one side of a slice of bacon. Wrap the bacon in a roll.

Now dip each end of our roll in mayonnaise and yolk.

Add a sprig of parsley between the mushroom and the roll. We pierce all this with a skewer to secure it. The second version of the canapé is ready.

This type of canapé is probably the most difficult to prepare, since we need to make a round slice of bread, potatoes and also make an intermediate layer of soft white cheese.

We need Borodino bread - black and fragrant. Onions - feathers, potatoes need to be boiled in their skins and not peeled before slicing, so that it is easier to form our circles. We will remove the seeds from the herring using tweezers and cut it into rectangular pieces - as in the photo, not small.

Another important element is a pastry syringe or any other large syringe - it will be convenient for them to form layers of canapés of the same shape, the appearance of our sandwiches will be very neat due to the smooth edges.

First, cut the boiled jacket potatoes into medium-thick slices.

Now, using a syringe, squeeze out the round piece from Borodino bread. Using your finger, lightly press the bread layer inside the syringe to make room for the cheese layer.

Using a teaspoon, scoop up the cheese and press it on top of the bread into our syringe.

Using a syringe mold, squeeze out another round piece from the potato.

Now we cut off the onion feather to the same length as our piece of herring and “sail” it on a skewer.

Now - the most interesting part. We stick a skewer into the middle of the potato round and with a careful but clear movement we squeeze out our round canope with a piston.

This is roughly what it looks like.

And here is the beautiful end result -

Let's take a few slices of white loaf, lightly salted red fish (by the way, I recently posted a gorgeous one - be sure to check it out), pieces of pickled ginger, butter, lemon and dill.

Finely chop the green dill and mix with a piece of softened butter.

Cut the loaf into circles using any suitable shape.

Spread this butter on the bread and place a slice of lemon on a skewer.

Place a piece of ginger on one edge of the fish slice and roll it into a roll. Place the roll on the greased bread and prick the top with a skewer and lemon.

    Very simple and very tasty!

Everything here is very simple - pre-cut hard cheese, bell peppers, pieces of canned pineapple into thick squares and open a jar of pitted black olives.

We assemble the structure on a skewer - prick an olive, pineapple, a piece of pepper and at the bottom - the base, cheese.

A very simple canape, but it looks very beautiful!

Let's prepare long thin rectangular strips of raw smoked sausage, slices of loaf, Philadelphia cheese or similar, slices of fresh green cucumber, pitted olives and sprigs of dill to decorate our canapés. Well, and skewers, of course, where would we be without them!

We cut out rounds from the loaf using molds. Spread each circle of bread with cheese.

Place a piece of cucumber and a rolled sausage roll on top.

We place a sprig of dill on the roll, use a skewer with an olive previously stabbed on it, and pierce our entire multi-story structure.

As they say, sleight of hand and no fraud :)

In this canape recipe, ours will do without skewers - you won’t need to pierce anything. All we need is ready-made small tartlets, Philadelphia cheese, dill and, of course, red caviar.

Use a spoon to fill each tartlet with cheese mixed with finely chopped dill. Spoon red caviar on top.

If you make at least 5-6 pieces of each type of canapé, we will get a magnificent, bright, picturesque and very appetizing dish, which, most likely, your guests and household members will be the first to empty. After all, such beauty on the festive table is difficult to ignore :)

Canapés for a festive table are small snacks on black or white bread. They can also be decorated on cookies, bagels, and puff pastries. Slices of bread are made small “for one bite”. A sandwich fork (skewer) is usually stuck into the middle of the slice.

Small sandwiches are made from any product: hard-boiled eggs, sausage, shrimp, cheese, feta cheese, herring, sprat, vegetables, pates, pasta, olives and more. The products are placed on bread and decorated with herbs, butter, radishes, boiled carrots, fresh cucumber, and lemon.
