Delicious meatballs in the oven, recipe pp. We eat meat without harm to the figure: dietary meatballs from minced chicken with gravy Dietary meatballs from minced chicken with gravy

Ground chicken meatballs are an easy dish that can be served with your favorite side dish, cooked in the oven or in a pan, with a sauce or glaze.

  • 500 g chicken fillet,
  • 250 g rice,
  • 130 g carrots,
  • 100 g onion,
  • salt, pepper (to taste),
  • 1 chicken egg,
  • bunch of parsley,
  • a tablespoon of sour cream,
  • tablespoon of tomato paste (you can use a third glass of tomato juice)
  • a glass of boiled water.

To make the dish light and low in calories, we advise you to use a Teflon frying pan. Otherwise, we will need a little more sunflower oil for frying.

Wash the chicken fillet and cut into small slices. You may ask, why do we cut it, you can grind it in a meat grinder? It is possible, but we will take the path of greater resistance so that the chicken meat can be clearly felt in the meatballs. If you also cut the chicken by hand, we advise you not to defrost it completely. Slightly frozen fillets are much easier to cut.

As for carrots and onions, now we only need half of both. Finely chop the onion and grate the carrots. Place the vegetables in a deep mixing bowl. We also send finely chopped parsley there.

We also put the chopped fillet along with the chicken egg and rice in a bowl with the vegetables. Salt and pepper the contents of the bowl and mix. We got minced chicken with rice and vegetables. Let's put it aside.

Chop the remaining onion and carrot halves again and lightly fry in a frying pan for 5 minutes. Set aside. We will add this frying to the gravy for the meatballs a little later.

Let's return to our minced meat. We rinse our hands with cold water so that the minced meat does not stick to them and begin to sculpt round meatballs the size of a quail egg. Place the meatballs in a frying pan and cook them for one and a half minutes on both sides.

Fry on the other side.

Place the finished meatballs in a thick-walled pan.

Let's start preparing the gravy. Add a tablespoon of sour cream, about the same amount of tomato paste (or a third of a glass of tomato juice) and a glass of water to the carrot-onion frying.

Stir and pour the gravy into the pan with the meatballs.

Place the minced chicken meatballs on a low heat and simmer for about 20-25 minutes. If the gravy begins to evaporate, you can safely add another half a glass of water.

To say that the chicken meatballs turned out divine is an understatement! They can be served with a side dish of mashed potatoes, buckwheat or wheat porridge.

Recipe 2, step by step: meatballs with minced chicken rice

Chicken meatballs with rice are the easiest way to have a hearty and tasty dinner. Of course, meatballs are not only prepared for dinner. This dish can be served for lunch or even as breakfast. This is because chicken fillet meatballs with rice turn out surprisingly light and tender, and tomato sauce with sour cream only adds piquancy to them.

  • chicken fillet 900 g;
  • rice 100 g;
  • onions 170 g;
  • rye flour 2-3 tbsp. l.;
  • tomato paste 100 g;
  • sour cream 20% fat 150 g;
  • pinch of salt;
  • water 1.5 tbsp;
  • Italian herbs to taste.

Let's prepare all the necessary ingredients to prepare chicken meatballs with rice.

We thoroughly wash the chicken fillet pieces in cold water, then dry them and pass them through a meat grinder. You can also grind the fillet using a blender. Place the prepared meat in a deep bowl. We thoroughly wash the entire specified amount of rice several times in a bowl of cold water, then cook in slightly salted water until half cooked.

Peel the onion, cut into large pieces and pass them through a meat grinder or grind in a blender to a puree. Place the chopped onion into a puree into a bowl with the chicken.

Place the cooked rice in a sieve to drain all excess liquid, and then give it time to cool.

When the rice has cooled sufficiently, add it to the meat with onions, knead thoroughly until smooth, then salt and pepper to taste, add, if desired, a certain amount of aromatic dried Italian herbs or any other spices. Mash the minced meat with your hands so that all the ingredients are completely saturated with spices.

We wet our hands in cold water and form the minced meat into neat meatballs the size of a medium-sized peach. Each ball is thoroughly coated in flour.

Heat a frying pan with a small amount of vegetable oil, place the meatballs on it in portions and fry over high heat until golden brown. Place the incompletely cooked meatballs in a deep, suitable saucepan.

In a large bowl, combine the required amount of fat sour cream with tomato paste, stir the sauce until smooth.

In the same frying pan in which the chicken meatballs were fried before, lightly heat the sour cream mixed with tomato paste and add water. Pour the heated sauce over the chicken balls in a saucepan. Simmer the meatballs until the meat and rice are cooked over medium heat with the lid closed.

Serve the finished dish hot in portioned plates along with the sauce. Minced chicken meatballs with rice in sour cream and tomato sauce are ready.

Recipe 5: how to cook meatballs from minced chicken (step-by-step photos)

  • minced chicken – 350 g;
  • loaf – 3-4 pieces;
  • milk – 1 glass;
  • onion – 1 head;
  • flour – 2 level tablespoons;
  • garlic – 1 clove;
  • carrots – 4 root vegetables;
  • sunflower oil – 3 tbsp. spoons;
  • salt - to taste.

Preparing this dish will not cause you any difficulties. All those who know what a knife is and have held a ladle in their hands will be able to handle it in no time.

So, cut off the crusts from the loaf pieces, put them in a deep bowl and fill them with milk. Let it sit and get wet.

We pre-defrost the minced meat or buy it chilled. We put the amount we need into a bowl, and throw in finely chopped onion and garlic passed through a press. Squeeze out the white bread pulp and add to the minced meat.

Add flour, salt to taste and mix.

One of the peculiarities of preparing meatballs is that they are rolled in flour, not breadcrumbs. In this case, we poured it directly into the minced meat. Grate the peeled and washed carrots on a coarse grater and place them in a frying pan with high sides. Pour in oil and 0.5 cups of water.

If you don't add water, the carrots will absorb the oil very quickly, won't have time to release the juice and will start to burn. Therefore, let’s help it a little to stay juicy. Add a little salt and place on medium heat. When the contents of the frying pan have boiled, roll the minced meat into small balls and place them on the carrots.

Close the lid and simmer the minced chicken meatballs over low heat for 35-40 minutes. The result is a very tasty and very healthy dish. Bon appetit!

Recipe 6: Minced chicken meatballs with rice and carrots

  • rice – 1 glass;
  • onions – 2-3 pcs.;
  • carrots – 1 pc.;
  • salt, pepper - to taste;
  • vegetable oil.

Pour a glass of water over the rice and cook over low heat until the liquid has completely evaporated. It is better to cook under a closed lid, without stirring during the process.

Grind chicken meat in a blender or meat grinder. We also chop the onions and add them to the minced chicken. You will also need onions for the gravy. That’s why we use half, not all of it.

Combine minced meat with rice. Mix. Season with pepper and salt. Mix the prepared minced meat thoroughly.

We form balls and place them in a heated frying pan with vegetable oil. It's easier to form balls with wet hands. This way they turn out neat and even. Lightly fry the chicken meatballs on all sides in sunflower oil and place in a pan.

Fill the meatballs until they are well covered with water. Grate the carrots on a coarse grater, cut the onion into small pieces. Place all this in a saucepan and bring to a boil along with the meatballs. Add 2-3 allspice peas to make the dish aromatic.

Simmer the meatballs over moderate heat with the lid closed for 20-30 minutes. Salt and season with pepper to taste.

  • garlic – 1-2 cloves
  • cheese – 50 g.
  • parsley,
  • salt pepper

For the sauce:

  • onion – 1 pc.

Pour the sauce over the meatballs and place them in the oven at 180C for 30-40 minutes. You can also cook the meatballs on the stove - cover the meatballs with a lid and simmer over low heat. Place the finished meatballs on plates and serve as a separate dish or with a side dish.

Bon appetit!

People who adhere to proper nutrition or are on a diet deservedly consider minced chicken meatballs one of the best additions to almost any side dish. This tender, aromatic and satisfying delicacy is served with mashed potatoes, porridge or vegetable salad and bread. You can fill meat balls with various gravies, making your diet not only healthy, but also varied.

Meatballs are made from different types of meat, but it is chicken that produces the least calories and at the same time relieves hunger for a long time. This meat is very healthy; it saturates the body with vitamins A and C, as well as B vitamins (B1, B2, B3, B5, B6 and B9), potassium, sulfur, phosphorus, calcium, chlorine, zinc, iron and other valuable microelements. During heat treatment, the product retains almost all its beneficial properties.

Meat for meatballs

The main ingredient in chicken meatballs is meat. All parts of the carcass and offal can be used in cooking. The main thing is that the chicken is fresh. It is better to buy refrigerated rather than frozen product. The chicken or its parts should be light pink, without any green, gray or brown coating. The meat gives off a specific “raw” aroma, but it should not smell rotten.

The most healthy (and low-calorie) products are minced meat based on chicken breasts. You can buy a semi-finished product in a store, or make it yourself by removing the skin from the meat, separating it from the bones and grinding it in a meat grinder.

Onions, garlic (optional), chicken or quail eggs, salt and spices are added to the chicken mass. You can also add soaked white bread, semolina, or grated vegetables (most often zucchini and squash are added).

Minced chicken meatballs: 2 best dietary recipes

There are many options for preparing meatballs. Most housewives have their own “signature” recipes, however, it is always interesting to try something new, surprising guests or delighting household members with a meat delicacy. Thanks to meatballs, your diet can be as tasty as your usual diet.

Diet chicken meatballs

For those who are losing weight, as well as for people with problems with the digestive organs, tender, low-calorie chicken products are perfect. They are very easy to prepare, for the dish you need:

  • 1 kg chicken fillet
  • 200 grams round rice (not parboiled)
  • 1 medium carrot
  • 2 small or 1 large onion
  • 2 cloves garlic
  • 2 glasses of tomato juice or 250 grams of tomato paste
  • 50 grams of vegetable oil
  • 1 bunch of dill, the same amount of parsley
  • 2 teaspoons salt

To taste, you can add herbs, black and allspice, and coriander. Cooking meatballs begins with preparing all the ingredients. The meat is washed under running water, then ground through a meat grinder. If you want the finished dish to literally melt in your mouth, you should pass the minced meat through the grinder several times (2 or 3).

Carrots and onions are peeled and washed. The carrots need to be grated on a fine grater, and the onion should be chopped with a knife on a cutting board, then they are mixed and sautéed in vegetable fat for 5 minutes (over medium heat).

Garlic cloves are peeled, washed and finely split with a knife. The frying is mixed with garlic and meat, everything is brought to a homogeneous state. The rice is washed under running water 3-4 times, after which it is boiled until al dente (half cooked), filtered (you can rinse it again in a colander) and added to the meat and vegetables.

Roll out small balls (about the size of a walnut or a little larger) from the minced meat and place them in a deep baking dish.

If tomato paste is used, it is diluted with water in equal proportions. The tomato liquid is boiled with salt (you can also add a bay leaf) and poured into a container with meatballs. Next, everything goes into an oven preheated to 180 degrees and bakes for about 50 minutes.

After finishing cooking and cooling the meatballs, they need to be sprinkled with finely chopped (pre-washed) herbs.

For those who do not like tomato sauce, as well as people with allergies to tomatoes, you can make a dish with creamy sauce. To do this, take a glass of heavy cream and dilute it in a similar volume of water, then add salt and spices with herbs, after which the liquid is poured into a bowl with raw meat preparations. Everything is placed in the oven for 50 minutes, and after cooking it is served warm along with a side dish or salad.

Low-calorie chicken meatballs with pumpkin

The peculiarity of this recipe is the replacement of nutritious (calorie) rice with pumpkin. The meatballs can be topped with tomato or cream sauce. In the first case, they will turn out more piquant and aromatic. To prepare such a delicacy, you need:

  • 500 grams of chicken (you can immediately buy minced meat)
  • 500 grams of pumpkin pulp
  • 1 chicken egg
  • 2 onions
  • 50 grams of vegetable oil (corn, sunflower or olive)
  • 1 clove of garlic
  • 50 grams of hard cheese (any type)
  • 1 teaspoon of table salt and the same amount of black and ground pepper
  • 1 large tomato or 1 tablespoon tomato paste and 1 glass of water

If desired, chopped herbs are added to the dish: parsley, dill and cilantro.

The meat is washed and ground in a meat grinder. 1 onion and pumpkin are peeled, washed and then chopped in a blender. The garlic clove is peeled and grated. Hard cheese is finely cut into strips or grated on a coarse grater.

All vegetables are combined with chopped meat, an egg is driven in and cheese, salt and pepper are added, the mass is thoroughly stirred until completely homogeneous. Next, small balls are formed from it with hands dipped in water (so that the minced meat does not stick to the palms) and placed in a saucepan.

The gravy is prepared separately. The second onion must be peeled and cut, then fried in oil and pour in tomato juice or tomato paste, crushed with water. Everything is stewed for 10 minutes, after which it is poured into a bowl with meat preparations. Raw meatballs are baked for 40 minutes at 200 degrees. You need to let them “finish”, then serve them warm, sprinkled with finely chopped herbs.

There is nothing complicated about making meatballs. Products made from minced chicken have the greatest benefits and excellent taste. They are suitable for dietary nutrition and help saturate the body with vitamins and minerals.
