Homemade potato cake. Classic recipes for Potato cake

Do you like to enjoy a taste that you have known almost since childhood? Do you know who invented the dessert? These cakes are a hello from my distant childhood. Every child and adult loved and ate them. They were sold in every store, even despite the food shortage that reigned at that time. During our distant childhood, it never occurred to anyone to cook these wonderful cakes at home, since they were everywhere, but the ingredients for their preparation could not be found. Nowadays, potato cake made from cookies is also sold in pastry shops, but something has changed in it. Perhaps they have become too elegant (which is not surprising in our era of food abundance), perhaps the recipe has changed. Let's make these wonderful cakes at home. And for this we will use a recipe that most accurately conveys the taste of cakes from our childhood.

To prepare we need:

  • 400 g of any cookies;
  • 50 g butter;
  • two tablespoons of cocoa powder (and a little more for dusting the cakes);
  • condensed milk 150 g.

Cooking time: 30 minutes.

1. The basis of potato cakes consists of cookies, but since in the process of preparing the cakes the cookies have to be crushed and crumbled, there is no need to buy beautiful and expensive cookies for this purpose. It would be advisable to use the simplest cookies. To begin, grind the cookies into fine crumbs. This can be done either by hand (using a mortar or rolling pin), or by grinding it using a meat grinder or food processor.

3. Following the cocoa, add pre-melted butter, then lightly mix the mixture.

4. Condensed milk should be added to the mixture in several stages so as not to miss the right moment and not make our mixture too liquid.

5. After each time adding condensed milk, mix the “dough” thoroughly so that the condensed milk is evenly distributed throughout the entire volume of the mass. When our dough is completely soaked in condensed milk, we begin to knead it. Knead the dough for about two minutes. This process allows the entire mass of crumbs to be evenly soaked in condensed milk and butter.

6. Roll the finished dough into a ball and let it stand for ten minutes. Then we tear off pieces the size of a small tangerine from the mass and roll them into a ball, and then give them an oblong shape (like a potato).

7. If desired, the formed cakes can be rolled in cocoa powder or powdered sugar, and the cakes can also be decorated with cream. Enjoy your tea!

Another recipe for cakes in 5 minutes:

Who invented "Potato"?

“Potato” owes its history to Frederike Runeberg, the wife of a 19th-century Finnish poet, who one day prepared cakes from the simplest ingredients - jam, cherry liqueur, sour cream and cookies. The guests really liked the small lumps decorated with berries, and the fame of “Potato” spread to all corners of the country. Over time, the recipe changed somewhat - they began to make the cake from sponge crumbs and a variety of creams.

I love “potatoes”, but I don’t manage to eat them so often, because they have recently become much more expensive (And the recipe, it turns out, is so simple! I’ll definitely try to make it)

Since childhood I have loved Potato cake. I was inspired by this recipe and prepared it, it’s not complicated, but the taste is really similar to the one it had in childhood)

I followed the recipe exactly and it turned out delicious.

I love it, our family’s favorite cake)

I recently saw these cakes being sold in a store, but I couldn’t even think that they could be made at home. Thank you for the delicious and very simple recipe) The potatoes turned out just great)

Very simple, affordable, and most importantly delicious. Thanks for your hard work.

I tried your recipe and it was very tasty. Everyone in the family loves potatoes, but now they are expensive to buy ((and I tried your recipe, we really liked it, now we eat it almost every day)) thank you for sharing such a delicious recipe!)

This popular delicacy is known and loved by everyone. But lately it has been difficult to find a truly tasty product in stores and cafes. So let's find out how to make potato cake yourself.

There are a lot of dessert options, but... the traditional recipe is always the best.

To prepare you will need:

  • can of condensed milk;
  • packaging of butter;
  • tsp Sahara;
  • about 700 grams of cookies;
  • six spoons of cocoa.

Cooking process:

  1. The selected cookies must be crushed into very fine crumbs. This is best done with a blender, but if you don’t have one, use a meat grinder or simply crush it with your hands.
  2. Soften the butter a little (it shouldn’t just come from the refrigerator shelf), mix with condensed milk and beat thoroughly. Then add cocoa and mix the mixer a little more.
  3. Carefully add cookie crumbs into the resulting mass, bring the mixture to homogeneity and mold into shapes in the form of potatoes.
  4. Grind the specified amount of sugar with a large spoon of butter and form “eyes” for the cakes from this mixture. But decorating them in this way is not at all necessary.

Cookie recipe

Potato cake made from cookies is prepared very quickly and does not require large material costs, but it turns out invariably soft and tasty.

Simple “For Tea” or “Anniversary” cookies are very suitable as a filling.

  3. Pour condensed milk into the dry ingredients and add butter, cut into small cubes (it should be quite hard).
  4. Mix all ingredients thoroughly until soft and homogeneous. If the mass comes out a little dry, then you need to add a little more oil or condensed milk.

  • banana;
  • half a glass of oatmeal;
  • 100 grams of coconut flakes.

Cooking process:

  1. Grind the flakes almost into flour, mix with cocoa and shavings. It is advisable to pass this mass through a food processor or blender again.
  2. We turn the banana into puree, add it to the other ingredients and get a homogeneous mixture.
  3. All that remains is to make any shaped potatoes out of it, which you can roll in cocoa to taste and freeze a little before serving.

How to replace condensed milk in dessert

If you really want to make cakes, but don’t have condensed milk on hand, try replacing it with a small amount of milk or cream with added sugar.

  • A dietary option is to use banana puree, which goes very well with cocoa.
  • Also, instead of condensed milk, jam or preserves are quite suitable. But adjust the amount of sugar so it doesn't turn out too sweet.

Potato cake is a delicacy that is still relevant and loved. And no matter what recipe you use, the dessert will always turn out very tasty.

Potato cake is a taste familiar to many from childhood. Previously, when there was not a large selection of cakes and pastries as there is now, these dark cakes, reminiscent of potatoes in color and shape, were especially common. Now it has become a little more difficult to find them in stores. But it is very easy to make cakes at home.

You can make Potatoes from crackers, cookies or homemade biscuits. Try all the options and decide which one is closer to you. I prefer to cook Potatoes from homemade sponge cake. The cake turns out more tender, lighter and tastier. One of the keys to success in preparing this dessert is good condensed milk. Do not take condensed milk with vegetable fats; it is low-quality condensed milk. It is also very important to find a good cocoa powder that will give the brownies a rich chocolate flavor. And I additionally add a teaspoon of cognac to the cream; it gives its noble aroma to this dessert. You can skip the cognac, but this will deprive the cakes of some flavor.

The cakes can be made in any shape you want. Traditionally, they are rolled into balls by hand or into an oval shape. But you can also diversify the recipe and use shaped molds. In addition, the cakes can be decorated with berries and fruits, sprinkled with grated chocolate, powdered sugar or coconut. A friend of mine sticks eyes, a smile and forelocks to the cakes - so the cakes look like smiley faces. As they say - everything is up to your imagination.

Ingredients:

  • Eggs 5pcs
  • Sugar 100g
  • Flour 100g
  • Butter 1 pack
  • Condensed milk ½ can
  • Cocoa 5 tsp
  • Cognac (optional) 1 tsp

Potato cake recipe.

1. Separate the whites from the yolks. Let's take care of the yolks first, and you can put the whites in the freezer or refrigerator for a couple of minutes - well-chilled whites whip easier and faster.

2. Beat the yolks with half the sugar until light in color, and the cooled whites with the remaining sugar until they form strong peaks.

3. Gently mix using a spoon using movements from bottom to top.

4.Add flour and mix again very slowly, using a spoon.

5.Place the biscuit dough into the mold.

6.Bake the biscuit at 200 degrees for about 20 minutes, depending on the height of the mold. Remove the biscuit pan from the oven and cool completely. The sponge cake, which is quite fluffy at first glance, will shrink a lot, but don’t worry, it will remain tasty and airy.

When the biscuit has cooled completely, you can remove it from the mold.

7. Grind the cooled biscuit into crumbs using a blender, meat grinder, or by hand)

8. Leave the butter at room temperature until softened.

9.Add condensed milk to the softened butter and beat with a mixer until smooth.

10. Add cocoa, cognac. Mix well again.

11.Combine the biscuit crumbs with the cream.

12.Form the cakes.

13. Decorate as desired: you can roll the cakes in some, pour melted chocolate on them, decorate with cream or nuts. I decorated with fresh berries.

Potato cake is ready at home and can be served immediately with tea. Bon appetit!

I remember the taste of this dessert from early childhood. It was the Potato cake that my dad bought for me when we went for a walk in the park. It seemed to me then just an unearthly delicacy; my mother never bought me anything like this. And when my children arrived, I wanted to treat them to dessert as well. But the store-bought cakes didn’t taste the same as I remembered. Homemade potato cake is the most delicious treat for children.

Since Soviet times, many people have retained their love for the cake, which has a rather simple name - “Potato”. Why this name arose is clear if you look at the shape and color of the dessert. Some prepare it from crackers or biscuits, others from cookies or gingerbread, some prepare the dough with condensed milk, and some make do with only butter and sugar. • cognac (liqueur, rum) 2 tsp. - optional
  • a few peanuts or almonds for garnish

How to make Potato cake:

Potato cake at home is most easily made from shortbread or biscuit cookies, because they are the easiest to crush. But grinding crackers will be a little more difficult. The cookies need to be crushed to crumbs in a blender or meat grinder.

If you have neither one nor the other, you can roll the cookies directly in a thick plastic bag several times with a rolling pin until they are crushed. If you have leftover homemade sweets, they can also be used in this dessert.

Mix condensed milk with soft butter. Do not melt the butter, it should just become soft after standing at room temperature. Add cocoa powder, vanillin and alcohol to the cream, I use VanaTallinn aromatic liqueur. Mix well. The cream can be of different consistency depending on the oil and. Today my cream turned out to be quite thick.

Combine cream and cookie crumbs.

Stir this mass very well, it turns out dense and thick.

Now we form the cakes into round or oval shapes.

For decoration I used peanuts, you literally need three grains. Peel it, chop it finely, and stick it into cakes in the form of potato sprouts.

Place the cakes in the refrigerator for several hours. You can, of course, eat it right away, but be patient a little, and you will see that after standing, the dessert will only become tastier.

A favorite delicacy from childhood - homemade potato cake is ready! Enjoy your tea!!!
