Before the slaughter, a prayer is read. The meat is divided into three parts - one is given to needy and poor people or left in the mosque, the second part is used in preparing festive dishes that are treated to relatives, friends and neighbors, and the third part remains in the owner’s house. It is important that sacrificial meat should not be stored, it should be eaten during Kurban Bayram, and the bones should be buried in the ground.

As a rule, one lamb is slaughtered from one family (from one family budget). Larger animals go to slaughter from 6-7 families.

Dishes prepared from sacrificial meat

Many different dishes are prepared from the meat of the sacrificed animal. As a rule, on the first day of Eid al-Fitr, dishes made from offal are served. On the second day, soup is cooked, the basis of which is lamb's heads and shanks. In addition, the meat is stewed and fried in various sauces and herbs, adding vegetables, rice, and legumes. Salad with fried lamb

Compound : 300 g fried lamb, 100 g green peas, 3 boiled potatoes, 2 cucumbers, a bunch of lettuce, 2 onions, 1 tsp. lemon juice, a small bunch of basil, 150 g of mayonnaise.

To perform the ritual of sacrifice on Kurban Bayram, a fattened animal no older than one year is chosen

Cooking method : Cut the meat into slices, onion into rings, add lemon juice and chopped basil, salt and pepper, mix and leave for half an hour.

Cut potatoes and cucumbers into cubes, add salad and green peas. Mix everything. Combine meat and vegetables, season with mayonnaise, serve on a platter decorated with lettuce leaves.

Lamb bone soup with rice

Compound : 300 g lamb bones, 50 g rice, 2 potatoes, carrots, onion, bunch of cilantro, salt and pepper to taste.

Cooking method: Pour cold water over the bones, bring to a boil and cook over medium heat, skimming off the foam, for 2 hours. Remove the bones. Add all other ingredients to the strained broth and cook for 20 minutes. When serving, sprinkle with cilantro.

Stewed lamb with leeks

Compound: 700 g leeks, 300 g lamb, 50 g ghee, 1 cup cream, 1 tbsp. l. flour, salt and pepper to taste.

Cooking method : Cut the meat into small slices and fry them in oil until golden brown. Salt and pepper. Chop the onion coarsely, add it to the frying pan with the meat, add a little water and simmer for 20 minutes. Mix flour and cream, add to meat and onions and bring to a boil. Then the fire is turned off and the finished dish is served to the table.

Recipes for sweets prepared for Eid al-Adha

For the holy holiday of Eid al-Adha, Muslims prepare many sweet dishes, giving preference to desserts containing almonds. Here are some recipes.

Almond milk

Compound: 400 ml milk, 100 g ground almonds, 2 tbsp. granulated sugar, 1 tbsp. cream, vanilla on the tip of a knife.

Cooking method: Add sugar, ground almonds and vanillin to boiling milk. Stirring, cook over low heat for 1-2 minutes.

Cookies "Shaker-puri"

Compound: 200 g flour, 100 g butter, 80 g almond flour, ½ tsp. cinnamon, egg, yolk, 100 g of powdered sugar, 125 ml of milk, 20 g of vanilla sugar, 5 g of baking powder.

Cooking method : Mix softened butter with vanilla sugar and powdered sugar, beat until fluffy. Add egg, yolk, milk and combine with butter. Pour the sifted flour into the resulting mass along with baking powder and cinnamon. Roll out the resulting dough into a layer 1-1.5 cm thick, cut out shapes with a mold and bake in the oven at 220 C for 15-20 minutes. Take out the finished cookies, brush with sugar syrup, sprinkle with powdered sugar.

Compound: 400 g flour, 400 g sour cream, 250 g sugar, 300 g water, 150 g butter, 6 eggs.

Kurban Bayram is the culmination of the pilgrimage ritual, which was established in memory of the sacrifice of the prophet Ibrahim (in the biblical tradition of Abraham). Everyone usually strives to atone for their sins: civil servants do not work on holidays, traffic jams in the city clear up during the day, everyone is indifferent to tourists, shops are closed in front of them, shopping centers are empty, and hotel staff are dismissed.

Eid al-Fitr is the main holiday in Muslim countries; its significance is comparable to Christmas among Christians. It is not for nothing that these two religious holidays were eliminated by the Soviet regime.

It is not surprising that the celebration of Eid al-Fitr in our country is not observed according to the rules and the entire ceremony is kept to a minimum. On holidays, many of our compatriots limit themselves to going to the mosque, giving alms, and having a gala dinner with their family. Instead of a sacrificial lamb, there is beshbarmak on the table, prepared from ordinary meat bought at the market.


But this holiday has a special sacrament and a lot of subtleties. The festival of sacrifice begins immediately after the completion of the festive morning prayer on the first day and ends shortly before sunset on the third day. It is prohibited to shed blood before the holiday prayer; the animal will not be counted as a sacrifice. Therefore, in cities and villages where there are no mosques and prayer is not performed, the time of sacrifice begins at dawn.

As a sacrifice, you can bring not only a ram, but also a camel, buffalo, bull, cow, sheep or goat. The tradition of eating horse meat is purely Kazakh. In many Muslim countries, horse meat is not only not sacrificed, but is also prohibited for consumption. This intelligent animal is associated with a symbol of wisdom and loyalty; the gallant horse is the horseman’s assistant in war.


As a rule, in Muslim countries, sacrificial animals are raised on special farms and brought to bazaars for Eid al-Adha. For example, in Istanbul alone, several million sheep are sacrificed on holidays. In cities where it is not possible to keep animals for a long time, residents bleed the sacrificial animal right at the market in a specially designated place.

According to the rules, the sacrifice must be done by oneself; only a woman can ask men to drain the blood of a sacrificial animal on her behalf.

Men prepare for this responsible mission in advance. A person who is going to make a sacrifice during the holiday should not cut his nails and hair ten days before the ritual.

Today the rules are a little simplified, and it is permissible to entrust the blood of a sacrificial animal to a special person called “kurbanji”, provided that the owner of the purchased animal is nearby during the ritual.

The sacrificial animal must be outwardly beautiful and healthy. This requirement has a religious explanation. According to the teachings of Islam, all the animals that a person managed to sacrifice will be waiting for the believer on the Day of Judgment at the entrance to the Sirat Bridge, which stands over the hellish abyss. And only thanks to the help of the chosen animals will a Muslim not fall into the abyss of hell.


Muslim custom also allows for sacrifices not only for the living, but also for the dead.

It is not recommended to leave the meat of a sacrificial animal for long-term storage; it is eaten on holidays. Typically, a third of the sacrificial animal is eaten in the house, a third is distributed to neighbors, and a third is given to the poor. In this case, the owner retains the right hind leg and chest of the animal. As a rule, raw meat is distributed, but in some countries there is a custom to distribute it in cooked form.

Another interesting detail is important: selling the skin of a sacrificial animal is prohibited. I think this is the most difficult test for leather craftsmen - how many sheepskin coats can be sewn from skins collected even in one small village!

If a person does not have time to buy a ram and make a sacrifice within the time allotted for the ritual, he can distribute the cost of the animal to the poor and needy.

The bleeding of the sacrificial animal is the opening of the ceremony. Once your lamb is already fragrant on the spit or served as beshbarmak, it’s time to start the festivities!

MOROCCAN LAMB WITH HONEY AND PRUNES

To prepare this festive dish for 6 servings you will need:
1 kg lamb
1 onion
130 g pitted prunes
350 ml hot tea
2 tbsp. l. hot water
5-6 tbsp. l. chopped fresh parsley
1/2 tsp. ground ginger
1/2 tsp. curry powder and a pinch of nutmeg
2 tsp. ground cinnamon
1/4 tsp. saffron
5-6 tbsp. l. honey
250 ml lamb or beef broth
115g toasted blanched almonds
2 tbsp. l. fresh coriander
3 hard-boiled eggs
Salt and ground black pepper to taste.

1. Place prunes in a bowl and pour in tea. Leave for the prunes to swell.
2. Place lamb, chopped onion, parsley, ginger, curry powder, nutmeg, cinnamon, salt and a pinch of black pepper in a baking dish and place in an oven preheated to 180 degrees. Cover and cook for about 2 hours until the meat is tender.
3. Drain the liquid from the prunes into the meat.
4. Mix the saffron with hot water and pour into the mold along with the broth and honey.
5. Bake, uncovered, for 30 minutes, turning the lamb occasionally.
6. Add prunes to the pan and mix well.
7. Serve by sprinkling the meat with toasted almonds and chopped coriander and garnishing with slices of boiled egg.

Sweet recipe for Eid al-Adha

10 round rice flour wafers
1.5 liters of milk
400 gr. sugar
200 g walnuts or peeled almonds (coarsely crushed)
1 tbsp rose water (optional)
50 gr. large pine nuts or peanuts (crushed)

Boil milk, remove from heat, add sugar, stir until sugar dissolves.
Pour the milk into a large bowl, soak each waffle in it until soft and place on a plate. Then place 2-3 tbsp on each waffle. nuts, wrap in the form of an envelope. And so on for each waffle. Place them on a plate. Pour the remaining milk little by little onto the prepared waffles. Let the milk absorb. Drizzle rose water on top, if desired. Then sprinkle with crushed pine nuts or peanuts.

Beshbarmak (Kazakh meat)

1 kg lamb (including brisket)
1 kg horse meat or beef
2 bay leaves
1 onion
salt, black pepper to taste

3 cups flour
2 eggs
0.5 cups meat broth
1 tsp. salt
For the gravy:
fat skimmed from broth
2 onions
1 bunch each of green onions, parsley and dill


Place the prepared meat in a cauldron or pan with cold water so that the meat is completely covered. Bring to a boil, carefully skim off the foam and simmer over low heat for about 3 hours.
All this time you need to remove fat from the broth. Half an hour before the end of cooking, add salt, pepper, onion and bay leaf. Once the meat is ready, cut it from the bones into thin, wide slices. Knead a stiff dough from flour, eggs and broth, roll it into a layer 1 mm thick, cut into 10 by 10 cm squares and boil in meat broth.
Place the onion, herbs and pepper cut into rings with salt in a separate pan, pour in the fat removed along with the broth and simmer over low heat for 10 minutes.
Place the finished dough on a heated dish, place the meat on top and pour the onion and herb gravy over it all. Serve the remaining sorpa - broth - in separate bowls with the addition of finely chopped greens.
