The filling should not be too juicy, otherwise the pancakes will become soggy and the baskets will fall apart. If you fill the pancake basket with fruit, you should do it just before serving.

“Scrambled eggs” from pancakes

For these pancakes, the dough is usually made with sour cream to make them denser and fluffier. However, according to other recipes, the pancakes should be thin and lacy, so the dish turns out to be very tender. Mix 250 g sour cream with ½ tsp. salt, mix in the yolks of 2 eggs and beat the mixture well. Add 160 g of flour, grind well, carefully fold in the beaten egg whites and bake the pancakes in a hot frying pan.

When the pile of pancakes is ready, you can start scrambling eggs. Place the pancake in a greased frying pan, heat it slightly and crack the egg into the middle, making sure to keep the yolk intact. Once the egg has set, fold the edges of the pancake over to create a square. Pancake eggs are ready!

Pancake rolls

Pancake rolls can be prepared with meat, fish, vegetable or sweet filling. The main thing is that it is dense enough, otherwise it will fall out of the rolls. Cheese fillings, pates, caviar, red lightly salted fish fillets, cottage cheese, chocolate or peanut butter are ideal. Many people like pancake rolls, which are prepared in the form of rolls with red fish, cucumber and soft cheese.

Place the filling on the pancake, smooth it out and roll the pancake into a tube. The rolls can be cut into pieces or served whole, decorated with herbs and vegetables (if the filling is not sweet) or fruits, nuts, cream.

You can wrap the rolls in a more reliable way. Place the filling along the edge of the pancake on one side, then cover it with the free edge of the pancake, slightly tuck the side parts towards the middle and twist the pancake into a tube. The filling in such a roll will be completely safe!

“Snails” from pancakes

Place a dough of 30 g of fresh yeast, 2 cups of warm milk and 2 cups of sifted flour. When the dough has doubled in size, add 4 yolks, mashed with 100 g of butter. Mix 2 cups flour with 3 tbsp. l. sugar and 1 tsp. salt and add to the dough, and then leave to rise again for an hour. If you plan to make stuffed snails, add 2 tbsp. l. filling on the edge of the pancake, then wrap them in a tube and twist them into a snail. Meat, fish, vegetable and cottage cheese fillings are suitable for this serving; you can also fill the “snails” with dried fruits and nuts.

Pancakes without filling are prepared differently - fold the two edges of the pancake towards the center, and then fold it again. As a result, you will get a four-layer strip that needs to be tightly twisted with a snail.

Bags of pancakes with filling

This is one of the most beautiful and easiest ways to serve pancakes, and pancakes can be made in two types - sweet and regular. For sweet pancakes, you can prepare sweet dough with milk or chocolate dough. Melt 80 g of dark chocolate and 4 tbsp in a water bath. l. butter, add 250 ml of warm milk. And finally, insert the second corner of the trapezoid into the gap formed as a result of all these complex manipulations. How to wrap pancakes with an envelope

Pancake envelopes are the easiest way to serve if you want to fill them with crumbly or dense filling and are confident that the pancake will hold its shape well. How to fold pancakes into an envelope to make them look appetizing?

This dish requires thin pancakes, the dough for which can be prepared in mineral water. Separate the white from the yolk, beat the white and yolk separately with a blender until thick foam, and then combine them together and beat again.     for making pancakes:

Grease each pancake with a piece of butter and place in a saucepan before serving. Place minced cottage cheese in the middle of each pancake, wrap and serve with your favorite jam or sour cream. To prepare minced cottage cheese, you need to thoroughly mix the cottage cheese with eggs and sugar.
