  • kefir - 500 ml
  • egg - 1 pc.
  • wheat flour - 800 g
  • sunflower oil - 3.5 tbsp. l.

You will also need one teaspoon each of salt and soda.

Break an egg into a bowl, add kefir, sugar and soda. To prepare sweet pies or buns, the volume of sugar should be increased to half a glass. Pour in vegetable oil. Leave the mixture for a few minutes.

Meanwhile, sift flour into another bowl - about two-thirds of the indicated volume. Cut the butter (softened, but not melted) into pieces and rub thoroughly with flour.

Pour the kefir mixture into the flour and butter and quickly knead into a soft dough. Already during the kneading process, add more flour until the dough becomes non-sticky. Once the desired consistency is reached, stop kneading.

The dough is ready to use immediately, but you can leave it under a napkin for half an hour.

Divide the dough into flat cakes (size - as large as your hand will take), roll each one out. Place the filling and make a pie. Bake in a frying pan or in the oven at 200 degrees.

Suitable fillings include potatoes, cabbage stewed in butter, eggs with green onions, cottage cheese and other fillings to suit the hostess’ taste. This simple recipe is also suitable for large pies and yeast-free pizza.

Dissolve yeast and about half a teaspoon of sugar in kefir at room temperature. Then add eggs, a teaspoon of salt and the rest of the sugar, mix. Pour in the oil.

Add sifted flour, stirring continuously. You need enough flour so that the dough ends up being a little sticky. Let it sit for half an hour and you can make pies or buns.

As in the previous recipe, a variety of fillings are suitable for this dough. For sweet products, it is recommended to increase the portion of sugar and also use a little vanillin.

Jellied pie with pork and potatoes

Ingredients for the dough:

  • kefir – 150 ml
  • egg – 2 pcs.
  • wheat flour - two thirds of a glass
  • Sunflower oil – 2 tbsp. l.
  • baking powder - 0.5 tsp.

You also need salt and soda, one pinch each.

For filling:

  • pork (lean) – 300 g
  • potatoes – 150 g
  • onion – 1 medium onion
  • carrots – 1 piece (small)
  • spinach – 50 g
  • salt, pepper - to taste

Break eggs, mix with kefir, add salt. Add baking powder and a small pinch of soda to the flour. Pour into kefir mixture and stir.

Pour in sunflower oil and stir until smooth. The consistency of the dough is like for pancakes.

Proceed with the filling. Boil the peeled potatoes until half cooked, let cool. Cut the meat into thin pieces. Chop the onion into cubes, carrots into thin rings.

Take a deep frying pan, suitable for both frying and baking in the oven. This will be the pie pan.

Place the frying pan on the stove, pour in vegetable oil. Sauté the onion until it becomes translucent. Add meat, carrots. Spicy lovers also add chopped chili peppers.

Mix everything and fry over medium heat for 10-12 minutes. Add salt and pepper to taste. Add chopped spinach and after a minute and a half turn off the heat.

Pour half of the batter into the pan on top of the meat and vegetables. Cut the cooled potatoes into circles and place in the next layer. Pour the other half of the dough on top.

The oven should be heated to 180 degrees. Place the pie and bake for 25 minutes. The finished dish should have a golden crust. Remove from the oven, let cool slightly under a napkin, and you are ready to serve.

  • semolina - 1 heaped glass
  • flour - 0.5 cups
  • eggs - 1-2 pcs.

  • butter - 50 g

In addition, you should add 0.5 tsp. soda, a pinch of salt. If desired, also vanillin.

Melt the butter and let cool. Mix kefir with eggs, sugar and salt. Carefully add semolina, stirring continuously to avoid lumps. Pour in the oil. Leave for 20-30 minutes for the semolina to swell.

Mix flour with soda, as well as vanilla (if used). Pour into the batter and stir. Pour into a mold greased with a thin layer of butter. It is advisable to use baking parchment.

Bake at 180 degrees for 30-40 minutes. The finished pie will be covered with a dark golden crust.

Manna with kefir can be prepared without eggs at all. In addition, there is an option with filling. To do this, cut three or four apples and, before baking, place them on the bottom of the mold and pour the dough on top.

Serve the cooled manna with jam. However, it will also be delicious without them.

Ingredients:

  • kefir – 240 ml
  • flour – 2-2.5 cups
  • egg – 2 pcs.
  • sugar – 1 glass
  • butter – 100-110 g
  • baking powder – 1 tsp.

Mix kefir with sugar until the latter dissolves. Pour in oil and mix. Add flour and soda and mix everything again.

Heat the oven to 180 degrees. Line the bottom of the baking sheet with baking paper, place the dough on top, and distribute it evenly.

Bake for half an hour. Remove the dough and immediately cut it into squares. The delicious baked goods are ready.

Ingredients:

  • kefir – 1 glass
  • margarine or butter - 150 g
  • flour – 2 cups
  • eggs - 3 pcs.
  • sugar – 1 glass
  • lemon - half the fruit

The dough still needs a pinch of soda.

For the filling, prepare 100 g of raisins. It should be washed thoroughly, then soaked in clean warm water for two hours. It tastes even better if soaked in milk or alcoholic drinks (cognac, rum, wine). Then dry the raisins on a towel and lightly roll in flour.

Melt margarine, add eggs, sugar and kefir. Grate the zest of half a lemon on a fine grater and squeeze the juice out of the pulp. Mix these ingredients with the liquid dough base.

Add flour and soda. Mix everything thoroughly but quickly until the dough becomes homogeneous.

Bake at 180-200 degrees for 30-40 minutes. Sprinkle the finished homemade cake with powdered sugar. It should be eaten cold.

Chocolate cakes with kefir “Nochenka”

Ingredients for the dough:

  • kefir - 1 cup (250 ml)
  • eggs - 3 pcs.
  • sugar - 1 glass
  • flour - 2 cups (280 g)
  • vegetable oil - 6 tbsp. l.
  • vanilla sugar - 1 sachet

To give the dough a chocolate taste and color, you need two tablespoons of cocoa powder and one tablespoon of instant coffee. To make the dough fluffy, use a teaspoon of baking soda and half a teaspoon of baking powder. For the layer you need any sour jam.

Ingredients for glaze:

  • cocoa powder - 2 tbsp. l. with a slide
  • sugar - 2 tbsp. l.
  • milk or water - 3 tbsp. l.
  • butter - 20-30 g
  • cognac - 2 tbsp. l.

Dissolve coffee in kefir. Separately mix flour with sugar, cocoa and vanilla sugar.

Beat the eggs tightly with a pinch of salt, pour in vegetable oil and kefir. Mix well. Add the flour mixture and stir until a homogeneous dough is obtained.

The bottom of the baking tray should be covered with baking paper. Pour the dough and bake for half an hour or a little more. The oven should be preheated to 180 degrees.

When the cake is baked, take it out, turn it over on the table, and remove the paper. Spread with jam until the cake has cooled. Then divide in half and connect the halves with the “jam” surfaces facing each other.

To make the glaze, add sugar and cocoa to the milk and stir. Place the mixture over low heat and stir until the sugar dissolves. After this, remove from the stove, put in the butter and pour in the cognac (but you can do without the latter). Mix.

Cover the cake with glaze. When warm, cut into equal pieces. Keep the cooled cakes in the refrigerator for several hours and you are ready to serve.

Pancakes with cottage cheese

Ingredients:

  • kefir - 500 ml
  • flour - 1 cup
  • egg - 1 pc.
  • cottage cheese - 210 g
  • sour cream - 3 tbsp. l.
  • vegetable oil - 2 tbsp. l.

You also need a little salt and soda.


Heat the kefir in a water bath until it becomes slightly warmer than room temperature. Add a quarter teaspoon of baking soda. Add the egg, flour and salt (if desired, also a couple of tablespoons of sugar). Mix thoroughly with a whisk. Pour in vegetable oil and mix again.

Grease a frying pan with a thin layer of oil and heat it up. Bake thin pancakes.

Mix cottage cheese with sugar and sour cream, crush thoroughly. If desired, you can also add raisins.

Spread the resulting mass onto pancakes, one spoon per pancake. Wrap in “envelopes” (as in the photo) or “tubes”. The pancakes are ready.

There is another version of the recipe. Put not sour cream into the filling, but a raw egg. Place the rolled pancakes on a baking sheet, spread sour cream on top and bake in the oven (180-200 degrees) for 20 minutes.
