The chicken fillet must be removed from the refrigerator in advance (half an hour before) to reach room temperature. During this time, preheat the oven to 180 degrees. For two steaks, mix 1 tablespoon flour with one teaspoon paprika or curry (the spices are for color and flavor only, so choose what you like). Rinse the chicken fillet and dry with a kitchen towel.


Cut off all veins and fat. Rub the fillet with a small 1 teaspoon of mustard. Salt and pepper. Then lightly rub in the flour-spice mixture and shake out any excess flour. This should be done immediately before frying. The flour should not become wet! Heat 3 tbsp. l. oil in a frying pan and fry the fillet on all sides over medium heat for 2 minutes. Then place in the oven in the middle position. The baking time depends on the size of the steak.

A standard factory fillet, which weighs about 200 g, needs about 8-10 minutes. For every additional 50g, add another 2 minutes in the oven. For example, a large piece weighs about 350g, so it will stay in the oven for about 15 minutes. I pulled out the segment 5 minutes earlier. Tip: 5 minutes before the end of cooking, you can switch the oven to grill mode and brush the chicken with marinade to make it even tastier and more original. My favorites: 1 tbsp. l. maple syrup + 1/2 tsp. grated fresh ginger + a few sprigs of fresh rosemary 2 tbsp. l. ketchup + 2 tsp. honey + juice of 1/2 orange Thai Sweet chilli sauce lightly:)


Before slicing, wrap in foil and let stand for 2-3 minutes. Please note that after cutting the board is almost dry. If the fillet had not been allowed to sit after frying, it would have been covered in chicken juices, and the steak itself would have been correspondingly significantly less juicy. That's the trick. The same thing works with any bird. A turkey takes correspondingly more time due to its size (see above).

The duck fillet (approx. 350 g) should remain pink, so 10 minutes will be enough, but the principle is always the same. Try it yourself to suit your taste, but be sure to fry the chicken until the end! If there is no oven, after 4 minutes of frying, reduce the heat to low and continue cooking with the lid on without removing it. Then turn off the heat. Then let it stand under the lid for another 5-7 minutes. Less effective than with an oven, but still ok. Ready!

Let the chicken marinate for at least 20 minutes. Then heat a little odorless vegetable oil in a frying pan and place the chicken in one layer. If you have a grill pan, then use it. Fry the chicken over medium heat. A small one will not produce a golden crust, and a strong one will not have time to fry the inside. First, fry the chicken on one side until golden brown, then turn over and fry on the other. Since the chicken pieces are thin, they will have time to fully cook in 7-8 minutes. If cooked longer, the chicken will become tough.
