Ingredients: 1-1.5 kg of chicken wings, 200 ml of water, 6 tbsp. wheat flour, 3 tbsp. starch, 1 egg, 1 tbsp. seasonings for chicken, 1-2 tsp paprika, 1 tsp each dry Italian herbs and salt, ½ tsp. ground black pepper, red hot ground pepper, vegetable oil for frying.
Cut the wings at the joints into 3 parts, remove the extreme phalanx. For especially spicy wings, mix them with 2-4 tbsp. water, hot ground pepper and salt, leave for an hour, adjust the spiciness with the amount of pepper. Mix flour with starch and all spices for batter, adding salt. Beat the egg with water (a little), you can mineral carbonated. Add the egg mass to the dry one, knead the batter, gradually adding the rest of the water, knead the dough, resembling kefir in consistency, put the wings into it. For dry breading, mix flour and paprika, salt and other spices to taste. Heat the oil, remove the wings from the batter and bread one by one in flour, immediately put into the oil and fry until cooked through for 5-7 minutes. Ingredients: 1 kg of chicken wings, 400 ml of refined vegetable oil, 250 g of unsweetened corn flakes, 120 ml of milk, 3 g of dry chili pepper, 2 eggs, 1 fresh chili pepper, ½ cup of wheat flour, ¼ cup of corn flour, 1.5 tsp. salt, 1 tsp ground paprika, ½ tsp cayenne pepper.
Cut off the extreme phalanx of the wings, cut the fleshy part along the joint in half into 2 parts. Remove seeds from fresh chili, chop it and grind with salt, mix this mixture with wings, leave for 40 minutes. Grind not into flour, but into large crumbs of corn flakes. For batter, beat eggs with milk, add salt, add cayenne pepper, ground chili and wheat flour - the dough should turn out like sour cream in consistency. Pour cornmeal into the bag, put the wings in it, shake so that the flour evenly covers them. Put oil in a saucepan or high frying pan with a thick bottom and walls to heat up. Dip wing pieces in batter, then bread in corn flakes, immediately dip in hot oil, fry for about 7 minutes, turning over in the middle of frying.
