Dishes for children should be colorful, interesting and, of course, healthy. This is the “hedgehog” made from pears and grapes. To prepare it, you don’t need any special culinary skills. This dessert is quite easy to prepare, but children will certainly enjoy it. They will appreciate not only its taste, but also its creative presentation.

Ingredients:

  • conference pear;
  • 1 olive;
  • clove seasoning;
  • grape;
  • toothpicks (for decoration).

The classic Hedgehog salad recipe contains four main ingredients: chicken, eggs, cheese and green peas. So, if you wish, you can get by with just them. However, this is too banal. A more interesting taste is obtained by using several other ingredients:

Boiled chicken (breast is best) – 300 g;
boiled eggs – 4 pcs.;
potatoes – 2-3 root vegetables;
onion - 1 head;
pickled cucumbers – 2 pcs.;
mayonnaise - for dressing;
olives and black olives – 100 g (for decoration);
salt, herbs (dill) and pepper - to taste.

Boil the potatoes in their skins, cool, peel and grate on a shredder. Separate the whites from the yolks of boiled eggs and grate them separately into separate bowls. Cut the onion into half rings and fry until transparent, then add champignons cut into slices, add salt and pepper and fry until tender. Simply cut the cucumbers and boiled chicken into cubes. By the way, the chicken does not have to be boiled. If you use breast for the salad, you can also fry it.
Now it's time to start assembling and shaping the snack. To do this, place a droplet-shaped layer of potatoes on a flat dish, add a little salt and grease with mayonnaise. If desired, the potato layer can be sprinkled with finely chopped dill.
Place a layer of cucumbers on the potatoes, which should be sprinkled with grated egg yolks. The next layer is mushrooms and onions, which are also smeared with mayonnaise. Then lay out a layer of chicken, which should be salted and peppered, and then greased with mayonnaise.
The final stage already concerns the design of the dish. Sprinkle the salad on all sides with grated egg whites, then coat the entire exposed surface with mayonnaise. All that remains is to lay out the “needles” and “eyes” of the olives, and then send the finished dish to the refrigerator for infusion.

Hedgehog salad with chicken and pineapples

An unusually tasty salad is obtained if you prepare it according to a recipe that contains canned pineapples. For such a snack you need to purchase:

Boiled chicken (both breast and leg are suitable) – 250-300 g of clean meat;
boiled eggs – 4 pcs.;
hard cheese – 150 g;
walnuts (kernels) – 100 g;
garlic – 2-3 cloves;
lemon juice - tablespoon;
mayonnaise - for dressing;

For this salad, it is better to use not pure mayonnaise, but a dressing based on it. This is where we should start. Crush the garlic in a press, fry the nuts in a frying pan without oil and chop with a blender. Mix both ingredients in a bowl, add mayonnaise and lemon juice. Mix everything well.
Cut the boiled chicken into cubes and place in the first layer in the shape of a drop. Top the chicken with dressing. Place pineapples cut into small pieces on this layer and also brush with dressing sauce. Cover this layer with finely grated cheese, which is also spread with salad dressing. The next layer is eggs grated on a shredder. And again a layer of sauce. All that remains is to make the “hedgehog” needles, eyes, and a nose from chopped olives and put the finished snack in the refrigerator.

Hedgehog salad with chicken and boiled carrots

This version of the salad involves using not boiled, but smoked chicken. This will give the finished snack some piquancy and unique taste. You need to prepare the following products for Hedgehog with smoked chicken:

Smoked chicken legs – 2 pcs.;
boiled eggs – 1 pc. (you only need the yolk);
canned pineapples – 250-300 g;
hard cheese – 150 g;
carrots - 2 medium root vegetables (if you take Korean carrots, you will need about 200 g);
mushrooms (any kind will do) – 250 g;
onion - 1 head;
vegetable oil - for frying;
mayonnaise - for frying mushrooms and dressing;
olives and black olives – 100-150 g (for decoration).

Cut the legs into fillets, chop finely, mix with a spoonful of mayonnaise and place on a plate in the shape of a drop. Boil the carrots, peel and grate on a shredder. This will be the second layer. To make the salad spicier and piquant, you can use Korean carrots instead of boiled carrots. Place a layer of mayonnaise on top of the carrots.
Finely chop the onion and fry until golden, add chopped mushrooms, a spoonful of mayonnaise and fry until the mushrooms are ready. Place the cooled roast on top of the chicken layer. The next layer is finely chopped pineapples.
Grate the cheese on a shredder and mix with mayonnaise. Coat the snack with the resulting mixture on all sides, giving it the shape of a hedgehog. Sprinkle the hedgehog's face with grated egg yolk, and make the needles and eyes from chopped olives. Place the finished salad in the cold for 12 hours, or better yet for a day.

Hedgehog salad, recipe with chicken and beets

Beetroot lovers will love the Hedgehog version with beets. It is tasty, healthy and very unusual. And you need to prepare the following ingredients for it:

Boiled chicken (breast is best) – 500 g;
boiled eggs – 4 pcs.;
carrot – 1 medium root vegetable;
beets - 1 medium root vegetable;
onion - 1 head;
mushrooms (champignons are suitable) – 250 g;
apple (sour varieties) – 1 pc.;
vegetable oil - for frying;
mayonnaise - for dressing;
olives and black olives - 100 g (for decoration).

The cooking technology is similar to previous recipes. Cut the chicken into pieces. Grate the eggs and boiled beets on a shredder. Grate raw carrots and apples too, but on a fine grater. Grind the walnuts using a blender. Fry mushrooms with onions.
The salad is laid out in layers in the shape of a drop: mushrooms with onions, mayonnaise, chicken and carrots, mayonnaise, beets, apples, nuts, eggs, mayonnaise. If desired, you can sprinkle additional grated cheese on top. Decorate the Hedgehog salad with olives, cut into strips. Make eyes from fruit halves. Cut the breast into cubes, chop the mushrooms: I had assorted mushrooms, I chopped the large ones more finely, and left the small ones as is.

Divide the eggs into whites and yolks, set aside the whites, chop the yolks and add to the salad. Add canned peas and squeeze in a clove of garlic. Combine with mayonnaise and mix. Add salt to taste.
