By the way, the filling for pizza with pickled cucumbers, which I will tell you about today, came to me quite by accident a long time ago - I simply took the products that I currently had on hand. And as it turned out, this is a very successful combination, loved not only by me, but also by my husband. So now I equally often cook not only meat, but also vegetable dishes - with cucumbers and mushrooms.

Required Ingredients

For dough for 3 medium pizzas:

  • Sifted flour - 3.5 cups
  • Olive oil – 2 tbsp.
  • Warm water – 1.5 cups
  • Sugar – 1 tsp.
  • Yeast – 1 tbsp.
  • Salt – 1 tsp.

And for the filling (per 1 pizza) we take:

  • Raw champignons – 100 g
  • Homemade tomato sauce – 100 ml
  • Cucumbers – 2 pickled
  • Korean carrots – 70 g
  • Cheese “Suluguni” – 100 g

Pizza with mushrooms and cucumbers - recipe with photos step by step

  1. We start making our pizza by preparing its base - the dough. To do this, mix the dry ingredients - sifted flour with granulated sugar, salt and dry yeast.
  2. Add warm water and olive oil.
  3. And knead the dough - after an hour and a half it will fit perfectly, and you can already work with it.
  4. And after this time, we begin preparing the filling. Wash the champignons and blot off the moisture.
  5. We cut into slices.
  6. We cut the pickled cucumbers into rings diagonally.
  7. Divide the dough into 3 parts (equal in size) - each will make a pizza with a diameter of approximately 30 cm.
  8. Take one part, roll it out and immediately transfer it to a baking sheet.
  9. Spread with thick homemade tomato sauce.
  10. First we place the mushrooms. I used raw champignons, but you can pre-fry them - it's all up to you. The taste of the finished dish will, of course, differ, but not too significantly. And if you decide to use wild mushrooms, then they must first be thermally treated.
  11. Then cucumbers.
  12. And put the carrots in Korean style.
  13. We fill it all with grated suluguni.
  14. And put it in the oven. It bakes quickly - 15 minutes at 190 degrees and you're done!
