Alexander Gushchin

I can’t vouch for the taste, but it will be hot :)

Russian pie with a delicate filling has been and remains a festive dish: it is used to greet guests and is served at the wedding table. Delicious, aromatic baked goods are prepared according to different recipes with all kinds of fillings. Dough for homemade chicken plays a special role; it can be made either shortbread or puff pastry. With a few tips for preparing the base of the pie, you can fully enjoy the taste of this dish. Relatives and friends are guaranteed to appreciate your culinary capabilities.

How to prepare dough for chicken at home

The dish is so loved by those around you that you don’t need a special occasion for it to appear on the table, especially since preparing the filling and base is simple and does not require special ingredients. However, you should be prepared to devote a lot of time to the chicken. The beauty is that the base can be sweet, salty, flaky or shortbread - choose according to your mood, the reason for baking, the set of products in stock. Avid cooks advise always using two types of dough: one for separating the filling of the kurnik, the second for the outer part.

How to knead yeast dough

The easiest way to cook delicious chicken does not lose its relevance. Buns and pies made with yeast dough are always very soft, airy, and aromatic. If you are a fan of this type of baking base, then you will need:

  • cow's milk (fat content 2.6) – 1 cup;
  • premium flour – 0.5 kg;
  • granulated sugar – 2 tsp;
  • eggs – 1 pc.;
  • butter – 50 g;
  • yeast (natural) – 25 g;
  • salt - tsp.

How to cook:

  1. Heat the milk a little, crumble the yeast.
  2. Separately, mix the egg with sugar, add salt, then beat. Pour the resulting mass into milk.
  3. Pour the melted butter into a common bowl and stir.
  4. Pour in flour, knead the dough thoroughly.

How to make puff pastry

The preparation process takes a long time, but the result lives up to expectations. Most people are too lazy to make puff pastry for homemade chicken on their own; they buy it ready-made in the store. If you are not one of them, then this simple recipe will hit the spot. You will need:

  • flour – 0.6 kg;
  • butter – 1 pack;
  • eggs – 2 pcs.;
  • water - 200 g;
  • salt - tsp;
  • citric acid - a pinch.

Start kneading:

  1. Add eggs, citric acid, and salt to flour and water.
  2. Mix everything and leave for half an hour.
  3. Chop the butter into pieces, mix with flour, and roll out. Set aside to refrigerate (20 minutes).
  4. Roll out the cake, folding the layer of butter inside. Turn the mass into a layer again.
  5. Roll up, cover with a wet linen (thick) cloth, and refrigerate for half an hour.
  6. Do the procedure 4-5 times.

Butter with kefir and margarine

This base turns out to be especially soft. Its peculiarity is that it does not change its taste for several days. You can easily leave the kefir dough in the refrigerator for a couple of days, and then just make the pie. To prepare the pie base you will need:

  • flour – 0.7 kg;
  • kefir (yogurt) – 200 g;
  • granulated white sugar – 90 g;
  • butter – 200 g;
  • salt (not sea salt) – 2 tsp.

This dough is easy to prepare:

  1. Let the butter melt, add eggs, beat.
  2. Sugar, salt, add kefir, mix.
  3. Gradually add flour, kneading.
  4. Wrap the finished mass in oiled cellophane and place in the refrigerator.

Crumbly with sour cream

This option is used for preparing savory baked goods. The dough with sour cream will create a dish with a golden crust and an amazing aroma. The main condition is the freshness of dairy products. A good dough will come out when you make it with natural milk and sour cream. For preparation you need:

  • flour – 0.5 kg;
  • fat sour cream – 60 g;
  • butter – 100 g;
  • egg – 1 pc.;
  • milk – 50 g;
  • salt – 1 tsp;
  • soda - tsp.

Making a pie, like in the photo in the magazine, is simple, but the dough must follow the rules:

  1. Beat the egg with sour cream with a fork.
  2. Pour in milk and melted butter. The latter should be high in fat.
  3. Salt, add soda. Mix everything.
  4. Add flour, make a steep knead.
  5. Refrigerate for half an hour before preparing the dish.

Shortbread with mayonnaise

The base allows you to bake a very tasty, rich pie. It’s easy to work with because the mixture comes out elastic and soft. It goes well with both fruit and meat fillings. For preparation you need:

  • flour – 0.5 kg;
  • yeast – 25 grams;
  • mayonnaise – 160 g;
  • water – 200 g;
  • granulated sugar – 3 tsp;
  • salt – 1 tsp.

A simple and profitable dough that any housewife can use:

  1. Heat the water, add yeast, a little flour, a spoonful of sugar (for the dough).
  2. When the mixture rises, add mayonnaise to the dough.
  3. Then add sugar, salt, mix everything.
  4. Gradually add flour.
  5. Knead the soft dough and leave it in the cold for 30 minutes.
  6. After time has passed, put the mixture in a bag, then dip it in warm water for 20 minutes.
  7. When it rises, start rolling it out.

Soft with milk

This proven method has been actively used by housewives for a long time. Delicious, soft dough is suitable for kurnik, buns and many other types of baked goods. By making a batch, you can get several delicious dishes at once. To prepare this base you will need:

  • flour – 1 kg;
  • fat milk – 0.5 l;
  • margarine – 200 g;
  • eggs – 2 pcs.;
  • granulated sugar – 1 tbsp. l.;
  • salt – 1 tsp;
  • yeast – 10 g.

Get started:

  1. Warm the milk slightly (36 degrees), add yeast.
  2. Add half of the margarine to the total mass. Leave for 20 minutes.
  3. Add salt and sugar, break the egg, add the rest of the margarine, stir well.
  4. Add flour and start kneading (by hand or with a mixer).
  5. When the mass becomes homogeneous, but not too dense, place it in a warm, quiet place for half an hour.

Kurnik is a complex dish. It takes time, patience and passion for cooking. If you've cooked it at least once, you know what I'm talking about. And you know for sure that the result is worth it!

Kurnik (recipe with photo attached, as always) is one of the most interesting dishes of Russian national cuisine. If you haven’t prepared it yet, you should definitely do so. Despite the fact that cooking chicken will require time and effort, the pie will become a favorite. It can't help but become. After all, he is a “pie-father”.

In the old days, kurnik was served only at the festive table, and at the royal table too. It was always present at the wedding feast, and it was baked in two houses: at the groom’s it was made “with figurines”, and at the bride’s it was decorated with “flowers”.

What is a chicken? About the ingredients of the chicken recipe

Kurnik is a multi-layer pie. Initially, the layers were not separated and only dough was used. Cereals, millet, and buckwheat were used as fillings.

Now this is a complex design, in which, in addition to the dough, pancakes are also involved, separating the layers. And the filling can be very different. From cereals, mainly rice, always boiled chicken meat (hence the name), in addition mushrooms and any vegetables, including potatoes.
What awaits you if you decide to cook kurnik (a short course for a young fighter)

Preparation of several types of fillings (there are three in the recipe: rice and egg, mushroom and chicken);
- preparing yeast dough;
- cooking pancakes;
- assembling the pie;
- baking;
- expectation.

However, don't be alarmed. Some stages can be completed in advance. For example, prepare toppings and bake pancakes. Then assembling and baking the chicken will become a fairly quick task, and the pleasure from achieving the goal will be so exultant that it can only be compared with the pleasure from the taste of the chicken. And it is, without exaggeration, comprehensive - believe me! No one remains indifferent!

Ingredients

For the mushroom filling:

  • fresh champignons - 400 grams,
  • onions - 2 pcs.,
  • vegetable oil for frying.

For the chicken layer:

  • boiled chicken meat - 500 grams,
  • dill and parsley.

For the rice layer:

  • rice - 1/3 cup,
  • egg - 2,
  • green onion - 3-4 feathers.

For pancakes:

  • egg - 1,
  • milk - 1 glass,
  • flour - about 100 grams,
  • vegetable oil - 4 tbsp. spoons,
  • salt.

For yeast dough:

  • milk - 1 glass
  • egg - 1
  • butter - 4 tbsp. spoons
  • fresh yeast - 25 grams
  • flour - 500 grams
  • sugar - 2 teaspoons
  • salt - a quarter teaspoon
  • egg yolk for greasing

Preparation

    The chicken recipe is a whole series of steps, so detailed instructions are required.

    Filling for chicken. In fact, there is not just one filling, there are three. Consider that you are preparing three pies at once - this is exactly what a puff kurnik made from pancakes on yeast dough is like (although another kurnik is the same).

    Mushroom filling. Wash the mushrooms and cut them into small pieces so that later it is convenient to layer them.
    Peel and chop the onion.
    Pour oil into a frying pan, add mushrooms and onions and fry over medium heat.
    Cool and add salt and pepper to taste.

    Rice filling. Boil the rice in plenty of water (the best ratio is 1:10), rinse and drain.
    Boil the eggs until hard, cool, and peel. Mash with a fork or grate, or cut into small cubes.
    Wash and dry the green onions. Grind.
    Add eggs and onions to the rice, add salt and stir.

    Chicken filling. Tear boiled meat without skin and bones into small pieces (or cut).
    Wash and chop the greens.
    Add to chicken.
    Add salt and pepper, stir.

    Dough for chicken. Pour warm milk into a bowl. Add the yeast and dissolve it. In another small bowl, lightly whisk the egg, sugar and salt. Add the egg mixture to the milk and stir.

    Pour melted butter into the dough. Add the sifted flour, knead the dough (it should not stick and should not be too steep).

    Place the bun to proof (this will take about 2 hours) in a greased bowl.

    Pancakes for chicken. Whisk the egg, milk and salt in a bowl.
    Add vegetable oil. Add flour and stir until the dough is smooth (no lumps!). If there is not enough liquid, add milk; if too liquid, add flour.

    Bake in a hot pan.

    Assembling the chicken house. It is better to assemble immediately on what the cake will be baked on, for example, on a baking sheet, in a baking dish, on a silicone mat. You can assemble on parchment and then carefully transfer to a baking sheet.

    Divide the yeast dough in half. Roll out one part into a circle with a diameter slightly larger than the diameter of the pancakes.

    Place a layer of mushrooms and smooth.

    Cover with a pancake.

    Place a layer of chicken on the pancake.

    And cover with the pancake again.

    Last row - fig.

    Roll out the second part of the yeast dough into a circle.

    Cover the pie and crimp the edges, bringing the bottom edge up (do this carefully!).

    This is what it looks like when pinched.

    Decorate the pie with any figures from the leftover dough.

    Make a hole in the center (go almost to the very bottom).

    When assembled and decorated, the pie looks like this.

    Brush with yolk beaten with a little water.

    Bake in a preheated oven, t - 200 degrees, time - about half an hour.

    Take out the pie and pour 50 ml of chicken (or mushroom) broth into the hole (the hole you made).

    Cover with a towel and let stand for at least an hour.
    Serve the finished chicken with all kinds of sauces. But it’s especially delicious with a cup of hot chicken broth.

Kurnik is a complete improvisation. You can easily make any yeast dough (in my recipe for kurnik - straight dough) and even use store-bought, and even puff pastry. Kurnik on puff pastry is great, by the way! And on shortbread - crunchy, brittle - simply fabulous.

Also cook pancakes that you know and can do. Moreover, they can be baked from any flour, for example, with the addition of buckwheat. The taste of the finished pie will, of course, be different.

The filling for the layers is again your personal improvisation. And their number, by the way, too. If there are 3 types of fillings, then you can make 3 layers, or all 6 (laying half of the finished filling in one layer). One of the most famous options is kurnik with chicken and potatoes.

A little history of the pie

Kurnik is a chicken pie by definition. Everything else is optional. But.

Don’t be surprised if you come across chicken chicken with meat (minced beef, for example), fish, eggs, and even chicken with berries! The whole point is that, as they say, “what are you rich in?” And if in the Stavropol region you are treated to kurnik with chicken, then in Karelia, the country of lakes, one of the layers will be fish. And in the North, Russians are even served kurnik with cranberries.

So here it is. Be sure to try everything. But start with ours.

Have a good and sunny day everyone! Today's article will again be devoted to pies. Only this time we will bake chicken pie according to a homemade recipe. This original dish has a funny name, kurnik :)

When my child first heard that I had baked chicken and said go sit at the table to eat, he immediately blurted out to me, kurareka, crowing, these are the associations a child has. Honestly, and not for nothing, because this miracle really consists of the main ingredient of the filling - chicken meat.

In the article you will find different best types of this baking, from lazy, quick preparation, to more difficult ones. Although there is nothing complicated in any option. The main thing is the desire to pamper yourself and your loved ones with delicious food.

Kurnik with chicken and potatoes, classic step-by-step recipe with photos

I think that looking at this photo you will immediately go to the kitchen to cook. This pie looks so appetizing, filling and delicious. Is not it? In this version, chicken meat will be used; there is no minced meat. After cooking, the pie will need to be cut into portions and served to guests or loved ones.

We will need:

For the test:

  • kefir - 250 ml;
  • butter - 180 g;
  • flour - about 600-700 g (how much the dough will take);
  • salt - ½ teaspoon;
  • baking soda - ½ teaspoon.

For filling:

  • chicken (fillet) - 350-400 g;
  • potatoes - 3-4 pcs.;
  • onions - 2 pcs.
  • butter - 30 g;
  • salt, pepper - to taste

For lubrication:

  • egg yolk - 1 pc.;
  • water - 1 tbsp. l

Cooking method:

1. To prepare this dish according to the traditional classic version, it is not at all important to be a great cook. The recipe is quite simple and not complicated, even a beginner can do it. First, prepare all the ingredients, and then start kneading the dough.

Pour the kefir into a clean, dry bowl and add soda.

Important! The soda used is not slaked, please note! Since kefir is a sour dairy product, it will quench itself in it and there will be no unpleasant aftertaste of soda.

After baking soda, add salt to kefir. Stir. Let this white mixture sit for a while, about 5 minutes, so that the soda is well extinguished.

2. The butter will need to be melted in a water bath; to be honest, now many people use a microwave instead. You can melt a piece of butter there. Add melted butter to kefir. Stir. Carefully add flour gradually and slowly.

Mix everything well with a spoon, after you reach the point where it is not convenient to stir with a tablespoon, put the flour mixture on the table and knead the dough. It should be soft and elastic and not stick to the palms of your hands at all. After kneading, place it in the refrigerator for an hour, wrapping it in cling film.

3. Now the most important and important thing is the filling for the pie. Beautiful fresh chicken, cut the flesh into small, small pieces. Cut the onion into fine cubes. Lightly salt the filling.

4. Cut the potatoes into slices. Mix with meat and onions. Season with salt and pepper to your taste. It should turn out very magically delicious. It is best to take freshly ground pepper, it is more aromatic.

Important! The potatoes should be cut very thin so that they have time to bake and become soft and fragrant.

5. Remove the dough from the refrigerator. Divide it into 2 parts. Place one fourth of it aside; this will go to the top of the pie. Roll out the first part with a rolling pin into an even circle, if your shape is round, but if it’s rectangular, then into a different shape. Place the resulting dough circle on a baking sheet greased with vegetable oil. Be sure to make high sides. Next, add the filling.

Then cover the top with a second layer. Connect the edges well. Leave a small hole in the very center so that steam can escape successfully. Brush the top and surface of the pie with raw yolk and water. To do this, simply combine water and yolk and stir the mixture with a fork.

Bake this product for about one hour at a temperature of 180-200 degrees in the oven. As soon as you see that it has browned and acquired a brownish color, remove from the oven.

It should be served cooled, cut into portions. Bon appetit, friends!

Kurnik made from puff pastry with chicken and potatoes

The pie and its preparation is such an interesting, delicious adventure, the result of which is a fragrant and juicy chicken.

Prepare it using this simple, easy option and you will definitely love this dish. My grandmother suggested this type to me; this is my grandmother’s recipe for making this masterpiece from ready-made store-bought puff pastry. Choose a yeast-free one in the store, although you can also use a yeast version.

Therefore, this option is quick, one might say for the lazy, there is no need to suffer and start the dough. Moreover, you can always buy puff pastry in the store at any time and at any time of the day.

We will need:

  • Puff pastry without yeast – 1 kg
  • Potatoes – 6 pieces
  • Chicken breast – 350 g
  • Salt - to taste
  • Spices - to taste
  • Carrots – 1 piece
  • Egg – 1 piece

Cooking method:

1. Thaw the dough first. On any package there are always instructions on how to defrost it correctly and how long it should lie on your table. After this, make the filling. Peel fresh potatoes and cut into small cubes. It is best to cut the chicken breast into strips, and the carrots into small cubes.

2. To make the baked goods fragrant, you need to add spices, your favorite spices and salt. Make a round cake from the prepared yeast-free dough using a rolling pin.

Important! Roll out in one direction only, i.e. from top to bottom, making a nice circle so as not to disturb the layers of dough.

Apply the prepared filling to the flatbread. Oh, how bright and beautiful, I already want to try it, don’t I?

3. Now roll out another circle and place it on top of the potatoes and chicken. Pinch the edges with your hands in a circle. Make a hole in the middle so that all the ingredients bake well and evenly. Brush the finished flour product with beaten egg using a silicone brush. This is done so that it shines and looks very appetizing and unusually beautiful after baking.

4. Bake a delicious masterpiece in the oven for 40 minutes. Turn on the oven to 180 degrees, this is the most optimal temperature for this dish. Check readiness with a wooden toothpick.

Be sure to let it sit and cool for a bit before serving. Serve with fresh juice or compote. And for starters, serve delicious rich borscht. Enjoy your meal!

Kurnik with minced meat and potatoes in the oven

Do you know that this dish was once served on holidays, such as a birthday or a wedding, or some other celebration. What holiday celebration are you serving it for?

This option with minced meat and potatoes is interesting because the chicken turns out to be mini and small.

It’s very original to look at such babies, and especially to treat them, because they are so tender, they use margarine, and therefore this delicacy will not go stale for a long time. There is no need to bake a large dish, but make small ones right away. So let's start with the ingredients and preparation.

We will need:

  • flour - 4 -5 tbsp.
  • margarine - 200 g
  • egg - 1 pc.
  • salt - 0.5 tsp
  • water - 0.5 tbsp.
  • minced beef or beef + pork - 500 g
  • potatoes - 3 -4 pcs.
  • onion - 1 pc.

Cooking method:

1. You will need to melt the margarine in the microwave or use a water bath. Then add water and one egg to it. Mix this mixture well with a tablespoon. Next, gradually add flour and knead the dough. It should be very soft and elastic, not sticking to your hands.

2. Do not cut the potatoes very large, try to cut them thinly so that they become softer better and faster in the oven. After cutting, add minced meat and mix. Grate the onion on a coarse grater and add it there. Salt and pepper

3. Now to make mini chicken chicken you need to roll out small flat cakes and put the filling in them.

4. Roll approximately as if you were preparing khinkali, just leave the center open. In principle, the shape is not important at all, you can sculpt them triangular, it is at your discretion and desire. Oh, and it turns out beautifully, don’t you agree?

4. Grease a baking sheet with vegetable oil and place the pieces, bake at 200 degrees for about 40 minutes.

Serve them warm, with strong brewed tea or some. The tiny chicken chickens look cool and simply gorgeous, and taste delicious and crumbly.

Bon appetit! If you suddenly want something sweet, then here are some sweet buns to help you.

Lazy chicken - fast, simple and tasty. Jellied pie

I love this look, I mixed it, poured it and now there’s a bite at the table. What could be simpler and better than jellied pie, and even with chicken and potatoes, oh, delicious? Many people also call it a snack option. Definitely suitable for a quick meal.

The dough will be liquid in this form, keep that in mind.

We will need:

For the test:

  • egg - 3 pcs.
  • mayonnaise - 3 tbsp
  • sour cream - 5 tbsp
  • flour - 1 tbsp.
  • baking powder - 1 tsp
  • salt - 1 tsp

Filling:

  • chicken breast - 2 pcs.
  • onions - 1 pc.
  • potatoes - 3 pcs.
  • spices, Italian herbs, salt pepper to taste

Cooking method:

1. Cut the chicken breasts into small pieces, add a little salt and pepper, add Italian herbs and spices.

2. Also cut the potatoes into cubes or circles. Add salt and pepper. Cut the onion into half rings and mix with potatoes.

Important! It is better to cut the potatoes into circles, since they can be made thin in thickness, which means the potatoes will bake quickly and will not be soggy

3. Break the eggs into a deep bowl. Beat them a little with a whisk, add half a teaspoon of salt, sour cream and mayonnaise. And of course, baking powder. Mix again with a whisk.

Important! Maintain all proportions!

4. Add flour sifted through a sieve. Stir. The consistency of the mixture should resemble that of pancake dough.

5. Cover the baking dish with foil and grease all sides and bottom with vegetable oil using a silicone brush.

6. Divide the dough in half. Pour the first part of the dough into the mold. And then add the filling to it: potatoes with onions and meat.

7. Pour out the second part.

Using a spoon, spread evenly on top to cover all the filling. Place the aspic dish in the oven at 180 degrees for 40 minutes. This is what happened, it looks very nice!

Is not it? What an appetizing and tasty piece it turned out to be, look at the cut! 😆

How to make dough for chicken with sour cream or kefir?

There are a lot of cooking options, a great variety. Every time I bake this product, I focus on my products, I think this is a good idea, because you don’t always have to take only one option and cook, you can try all types, and then settle on just one. How many of you have baked this culinary masterpiece with kefir? What fat content did you use? I usually take the low calorie one.

We will need:

  • flour - by eye, so that the dough becomes elastic and not sticky
  • kefir - 1 tbsp.
  • butter or margarine - 1 pack
  • salt and soda each - 0.5 tsp
  • potatoes - 4 pcs.
  • chicken fillet – 500 g
  • onions - 2 pcs.
  • pepper and spices as desired

Cooking method:

1. Add soda to kefir.

Important! Wait until the soda dissolves in the kefir, about 2 minutes should pass.

Then carefully pour in the melted margarine.

Important! If you use margarine in any baking, then know that such a flour product will not go stale for a long time than with butter. But it will taste better with butter.

Add flour gradually. Mix well.

2. Knead the dough into an elastic and soft dough so that it does not stick to your hands. After kneading, wrap it in film and put it aside to rest for about an hour.

3. For the filling, cut the chicken fillet into pieces, the onion into cubes, and the potatoes into long thin sticks. Pepper and salt. If you like spices, then add them. I usually use coriander, or all-purpose chicken seasoning.

4. After the dough has rested, divide it into two equal halves. Mash one half with your hands on a baking sheet greased with vegetable oil.

5. Add savory toppings.

6. Place a second layer of dough on top of the filling and very carefully roll up the edges of the pie. Make a hole in the center to allow steam to escape. Decorate with different curls.

Interesting! When you take it out of the oven, there will be smoke coming from the center. Maybe that’s why they called this dish so, kurnik, as if someone smokes like a steam locomotive

7. Place the pan in a preheated oven and bake until beautifully golden brown. The oven should be preheated to 180-200 degrees.

8. Delicious chicken stories to you!!! In the old days, such a pie was called Monomakh's cap. To make the dish shiny, cover it with egg yolk, but this is not necessary. Don't forget to invite your friends to see this beauty.

P.S. Do you know that it is customary to serve this meat dish with sauce. Sauces can be made to suit every taste. It can be cheese, creamy, tomato or even mushroom version. I suggest creamy.

So, the preparation steps are as follows:

1. One tablespoon of soft butter is ground with one tablespoon of flour, and this is diluted with any meat broth, about 2 cups. For a twist, add half a teaspoon of cream or sour cream.

2. Cook this sauce on the stove until it thickens and looks like thick sour cream.

  3. After this, add salt and melted butter to the flour. Grind all the ingredients together until crumbly.
  4. Then add eggs to the flour mixture and add water. Mix all ingredients using a food processor until smooth.
  5. Form the resulting dough into a flat cake and wrap it in cling film.
  6. Place the dough in the refrigerator for 30 minutes, and after this time, use it to prepare chicken.

Elastic dough for kurnik with sour cream

Chicken dough is much easier to prepare than many housewives think. The whole cooking process will not take much effort and time, unless, of course, we are talking about the yeast dough option. Despite the fact that today any dough can be bought in a store, I recommend that my readers at least once try to prepare such dough for chicken at home on their own. In order for all the cooking to go smoothly and without problems, I want to finally give you a few tips:
  • In all the proposed recipes, ingredients such as butter and margarine can be replaced with one another, without any harm to the final result;
  • Before adding to the dough, butter and margarine must be softened, or even better, melted in a saucepan;
  • In order for the dough to breathe and the finished baked goods to be fluffy, do not forget to sift the wheat flour through a sieve;
  • Before proceeding to the actual preparation of the chicken, the dough should lie in the refrigerator for half an hour;
  • If you don’t have cling film, then before putting it in the refrigerator, the ball of dough can be placed in a regular pan, having first greased it with a small amount of vegetable oil along the bottom and sides.

Many people, when asked: “What is Kurnik,” can answer that it is a Polish city in the Greater Poland Voivodeship. However, real housewives who know how to feed their family delicious dishes understand that chicken is a type of pie! A very tasty pie at the same time. The name of the pie comes from its filling – chicken. How to cook kurnik: this is a chicken pie made from unleavened or butter dough. In general, there are now many types of chicken, but initially it was made with chicken meat and the pie was decorated with different patterns made from dough (birds, people, animals, nature).

Nowadays kurnik is made not only with chicken, but also with potatoes, nuts and even porridge, as well as with duck, rooster, lamb or beef meat. Previously, kurnik was considered a wedding dish, which is why it was richly decorated with dough patterns. The first kurnik was presented by the groom's relatives to the bride's relatives on the first day of the wedding before the wedding, and the second kurnik was given by the parents of the newlywed to the newlyweds.

Dough patterns such as birds were very popular. This was a wish for fertility and a long healthy life. At one time it was obligatory to serve poultry at a wedding, most often chicken, but when the kurnik pie appeared, it gradually eliminated chicken on the table. Nowadays, you can more often find a simple loaf with dough patterns at weddings, and kurnik is a festive dish on the home table.

A quick and easy chicken pot.

Let's find out how to make kurnik pie quickly and easily. There is a recipe called “Quick Chicken”. You will spend about an hour and a half preparing it and can serve about 10 people. First, prepare the products necessary for the chicken chicken and these are:

  1. Raw chicken eggs 2 pcs.,
  2. Cream margarine (homemade) 180-200 gr. (pack of margarine),
  3. Sour cream and mayonnaise 2 tablespoons each (sour cream can be replaced with milk),
  4. Potatoes 5 medium size,
  5. Onion – 1 head,
  6. Flour (you will see for yourself how much is needed when it comes out, so add it last),
  7. Soda and salt, a pinch,
  8. Sugar 1 tablespoon,
  9. Chicken (you can fillet without bones, or you can have bones for more juiciness).

Now that you have everything ready, start preparing the chicken. Let's start with the test:

  1. Take a saucepan and melt the margarine over low heat, without letting it boil,
  2. Let the margarine cool slightly and add mayonnaise with sour cream, eggs, salt, soda and sugar,
  3. Beat the mixed ingredients with a mixer and gradually begin adding flour. It will be enough when the dough stops sticking to your hands (however, this does not mean that the dough is completely thick), but remains soft,
  4. Place the dough in the refrigerator for a while.

While the dough is in the refrigerator, prepare the filling for the chicken:

  1. Thaw the chicken, rinse and cut into small pieces,
  2. Grate the potatoes
  3. Chop the onion.

The filling is ready, all that remains is to make the chicken. To do this, take a good baking tray and sprinkle it lightly with flour so that after baking the cake can be easily removed. Divide the dough into 2 parts, where the first one makes up a third of the total dough. Roll out most of it and place it on a baking sheet, put most of the onions and potatoes on top, add some salt, put the chicken and add more salt, and put the remaining onions on top again. Next, cut 20 grams of margarine into thin slices (flat) and place on top of the filling over the entire surface of the pie. Roll out a smaller piece of dough on top and cover what you have already laid out with it, secure the pie around the edges with the dough and bake in the oven until cooked.

Chicken chicken.

If the previous recipe is more suitable for making a chicken pie with bones, now you will learn how to make a boneless chicken pie. This is especially important for those who do not like picking bones out of food. In addition, if you have children, they may accidentally choke on a bone, and you need to think about safety. So, the ingredients for boneless chicken:

  1. Chicken – 2 breasts (they are boneless, so they are ideal for you),
  2. Potatoes 4 pieces,
  3. Onions 1-2 pieces,
  4. Margarine 250 grams,
  5. Kefir 1 glass (200 gr.),
  6. A pinch of soda and salt,
  7. Ground black pepper to taste,
  8. Flour 3-4 cups.

To prepare boneless chicken chicken, follow the instructions:

  1. Prepare the dough. To do this, you need to sift the flour (2-3 glasses will be enough at first), add soda and salt to it. Margarine must be melted, cooled and added to the flour along with kefir. Knead the dough, adding flour if necessary, to obtain a soft dough that does not stick to your hands or the table,
  2. Place the dough in the refrigerator for 30-40 minutes and prepare the filling during this time.
  3. For the filling, you need to wash and peel the potatoes and onions. Potatoes can be grated or cut into small pieces. Chop the onion finely, although some prefer half rings,
  4. Remove the dough from the refrigerator and divide it into two unequal parts. Roll out one part and place it on a baking sheet (grease it in advance with vegetable oil), start laying the filling on top in layers: potatoes, onions, chicken,
  5. Salt and pepper the filling on each layer, and place the second rolled out piece of dough on top of the laid out filling, covering the kurnik with it, secure the layers of dough together and place in the oven, heated to 200 degrees until ready (40-60 minutes)

Kurnik puff pastry with potatoes.

If you haven’t tried it yet, you should cook chicken chicken with potatoes and rice. To do this, you will first need to prepare two types of dough:

  1. Take half a kilo of flour (maybe less, depending on the quality of the flour), one egg, a quarter glass of milk, a pinch of soda, a couple of spoons of sour cream and half a stick of butter or spread. Knead the dough from the ingredients and divide into three parts. One part will become the base, the second will be the “top” of the chicken pot, and the third can be used to make decorations for the pie,
  2. Take one egg, 1.5-2 glasses of milk, 5 large spoons of flour, a spoon of sugar and a pinch of salt. Beat the dough well and bake 5-8 pancakes.

Next you need to do the fillings. You will need one large chicken 1.5 kilograms, about 400 grams of potatoes, 2 boiled eggs, a couple of onions, herbs, salt, favorite spices and 200 grams of rice (the weight of ready-made porridge). Boil the rice until done. Chop the onion and sauté. Combine rice, onions and herbs together. Boil the chicken with seasonings and salt. Boil the potatoes until half cooked, grate them and mix with finely chopped eggs.

All that remains is to lay the puff chicken:

  1. Place one part of the first kurnik dough (already rolled out) on a greased baking sheet.
  2. Place the filling on the dough in layers: porridge, pancake, chicken, pancake, potato, pancake, etc. until the pancakes run out. So calculate in advance how much filling to put at one time,
  3. As soon as you place the last pancake, take the second rolled out part of the first kurnik dough and cover all the layers of the pie with it. Pinch the bottom layer of dough with the top one to make a whole pie,
  4. From the remaining dough, mold thin patterns or figures, maybe letters. Place patterns on the top of the pie,
  5. Make a hole in the dough on top of the pie so that steam can escape from the chicken when cooking,
  6. Beat the yolk and brush the kurnik with it, along with the pattern,
  7. Place the pie in the oven (200 degrees) for 30 minutes.

Chicken with meat.

If you don’t appreciate the taste of chicken, it’s worth learning how to cook chicken chicken for men. To make this pie you will need:

  1. Beef tenderloin 700-800 grams,
  2. Potatoes 3-4 pieces,
  3. Onions 1-2 pieces,
  4. Eggs 2-3 pieces,
  5. Ryazhenka – a small package (0.5 liters),
  6. Flour 1.3-1.5 kg,
  7. Margarine – 180-200 grams (one pack),
  8. Soda and vinegar, teaspoon and tablespoon respectively,
  9. Mayonnaise – 2 tablespoons,
  10. Salt and pepper.

The most important thing is to prepare the dough correctly. To do this, you need to cut the margarine and melt it, preferably in a water bath. Separate the whites and yolks of chicken eggs into separate containers. Sift the flour; for convenience, you can sift a third of the required flour first. Take a container with flour and form the flour into a small mound so that it is convenient to make a hole there (not to the bottom). Quench the soda with vinegar, add mayonnaise. Place the yolks in the well with flour and then add the mayonnaise mixture and mix. Add a little salt, add fermented baked milk and knead the dough until smooth. Now you can add a little more flour and slowly pour margarine into the dough while it is still hot. Next, you need to stir the dough with a spoon so as not to burn your hands. Gradually add more flour until the dough is soft and elastic so that it does not stick to surfaces.

The filling is very easy to prepare. It is necessary to peel the onion and cut it into small pieces; the meat is also cut into medium pieces. After this, the onions and meat undergo a grinding procedure using a meat grinder. As soon as the minced meat is cooked, it must be salt and pepper. Separately, cut the chicken potatoes into thin slices.

Next, take a convenient baking sheet and grease it with oil. Take the dough and divide it into 2 parts, where one is much larger. Place the larger part (larger than the diameter of the baking sheet) on the baking sheet so that the dough “hangs” from the edges of the mold. Then we put potatoes on the dough, and minced meat on it. Roll out the remaining dough and place on top of the pie, securing the two parts of the dough together. Beat the egg whites and brush the pie with them. Place the chicken in the oven for 40-60 minutes until cooked at 200 degrees.
