Cut the wings at the joints into 3 parts, remove the outer phalanx. For especially spicy wings, toss them with 2-4 tbsp. water, hot ground pepper and salt, leave for an hour, adjust the spiciness with the amount of pepper. Mix flour with starch and all the spices for the batter, adding salt. Beat the egg with water (a little), or sparkling mineral water. Add the egg mass to the dry mixture, knead the batter, gradually adding the rest of the water, knead the dough, which resembles kefir in consistency, and place the wings in it. For dry breading, mix flour and paprika, salt and other spices to taste. Heat the oil, remove the wings from the batter and bread them one at a time in flour, immediately place them in the oil and fry until done, 5-7 minutes. Use a slotted spoon to place the finished wings on a paper towel.
If the wings are suddenly not cooked, do not put them back in the oil under any circumstances - you can bring them to readiness in the oven for 10-15 minutes.
Corn breaded chicken wings


Ingredients: 1 kg of chicken wings, 400 ml of refined vegetable oil, 250 g of unsweetened corn flakes, 120 ml of milk, 3 g of dry chili pepper, 2 eggs, 1 fresh chili pepper, ½ cup of wheat flour, ¼ cup of corn flour, 1.5 tsp. salt, 1 tsp. ground paprika, ½ tsp. cayenne pepper.
Cut off the outer phalanx of the wings, cut the fleshy part in half at the joint into 2 parts. Remove the seeds from the fresh chili, chop it and grind it with salt, mix this mixture with the wings, and leave for 40 minutes. Grind the corn flakes into coarse crumbs, not into flour. For the batter, beat the eggs with milk, add salt, add cayenne pepper, ground chili and wheat flour - the dough should have the consistency of sour cream. Pour corn flour into a bag, place the wings in it, shake so that the flour evenly covers them. Heat the oil in a saucepan or tall frying pan with a thick bottom and walls. Dip the wing pieces in the batter, then bread them in corn flakes, immediately place in hot oil, fry for about 7 minutes, turning halfway through frying. Place the finished wings on a paper towel - it will absorb excess fat from the batter.
