There is no need to boil the currants, because this will destroy all the vitamin C in them. Bring to a boil after throwing the berries into the water and that’s enough. Infuse the prepared fruit drink for half an hour, covered, then cool and pour into glasses.

Currant juice (fresh)

This version of fruit drink can only be prepared from fresh black or red currants.

Use exactly the same proportions of ingredients as in the previous recipe. Wash the berries and mash them with a masher. Drain the juice from the resulting mass into a separate glass and put it in the refrigerator.

Boil water in a saucepan, add sugar and the cake left over from the berries. Stir the liquid, cover with a lid and bring to a boil. Immediately turn off the heat and cool the resulting broth.

Then strain the liquid through cheesecloth and combine it with chilled berry juice. This way you will receive a product that is ready for consumption. In addition, it contains a lot of useful substances, since the juice has not been subjected to heat treatment.

To begin with, we suggest you try blackcurrant juice, the recipe for which involves pre-squeezing the juice. Using it, a quarter kilogram of washed and sorted berries is lightly kneaded, after which they are ground through a sieve or pounded with an ordinary puree masher. If you used the second method, then the mass is collected in gauze and squeezed well so that the cake is almost dry. The juice is set aside, and the remaining blackcurrants are poured with a liter of water and boiled for three minutes from the moment of boiling. When the broth has cooled somewhat, it is strained, sugar dissolves in it (the amount depends on your preference for sweets) and combines with the juice. For taste, you can add a couple of mint sprigs to the broth while it cools. You can also acidify blackcurrant juice with fresh lemon juice. It is most often drunk chilled.
