    Bon appetit!

    Fried, baked and stewed cod is a dish loved by many connoisseurs. It would seem that what could be easier than cooking fish? But, unfortunately, after heat treatment this type of fish becomes dry and not very appetizing in taste.

    Moreover, during the process itself, the fish often sticks to the bottom of the dish, and then also falls apart, which, accordingly, not only spoils its appearance, but also affects the quality of the final result. To prevent this from happening, you should follow simple rules when cooking fish:

    • the fish carcass must be well defrosted and dry;
    • Cod should be defrosted naturally (on the table or on the bottom shelf of the refrigerator) without the use of hot “baths” or microwaves;
    • It is advisable to bread each piece (slice) in flour (breadcrumbs or semolina, or a mixture of two components);
    • the frying pan and oil should be very hot;
    • The fish should be cooked not on low, but on moderate heat;
    • It is advisable to fry the cod for about 6 minutes on each side, then cook in the desired way.

    Below are simple but very tasty recipes that will allow you to cook cod so that those around you will not be able to tear yourself away from the plate.

    How to deliciously fry cod in a frying pan - photo recipe

    To ensure that the fish acquires a slightly unusual aroma and light taste during cooking, it can be fried in “garlic” oil. To do this, the vegetable (peeled and washed, of course) needs to be cut into rings (slices), and after frying in oil, remove from the pan. Or, as an option, grate, fry, and then, without removing the remaining garlic, lay out the pieces of fish.

    Ingredients:

    • Thawed red cod carcass.
    • Wheat flour - glass.
    • Salt, garlic, ground pepper - to taste.
    • Vegetable oil - half a glass.

    Cooking time – no more than 30 minutes.

    How to fry cod:

    1. Rinse the fish carcass, cleaned of all excess (fins, tail, scales), thoroughly, wipe dry and cut into slices about 3 cm wide.

    2. Pour oil into the bottom of the frying pan (a couple of millimeters high), heat it thoroughly, throw in the garlic cut into thin slices and fry over moderate heat.

    3. While the garlic shares its aroma and taste with the oil, mix the spices into the flour, roll each fish slice in this mixture and place directly on the board (or on a plate). If you don’t want to “communicate” with flour, pour it along with the spices into a strong plastic bag, and throw pieces of fish in there. Tie the end of the bag and shake well several times until the fish is coated with breading.

    4. Remove the fried garlic from the frying pan and place the prepared pieces of fish in the oil. Over moderate heat, fry the cod for 6 minutes on each side without covering the pan.

    5. Turn off the heat and cover the pan for a couple of minutes to allow the fish to cook. Then carefully transfer the finished fried cod to a plate and serve.

    Fish has long been firmly established in our menu. For those who live on the banks of rivers, lakes, seas and oceans, this is not surprising - after all, the gifts of water are the most accessible source of food. But even the population, far from the expanses of water and arteries, does not deny itself the pleasure of at least occasionally eating fish. Why? Yes, because everyone wants variety, and fish are in no way similar to anything that walks or crawls on land (as well as to anything that flies above it). And the discoveries of doctors (including nutritionists) in recent years have only strengthened people in the idea that fish meat not only does not cause obesity, but also contributes to the overall health of many, many organs of our body.

    What are the benefits of sea fish?

    It is worth noting that fish, like different types of meat, is more healthy or satisfying, and there is neutral in relation to health or completely dietary. So, although it has a high content of phosphorus and calcium (very necessary elements!), it is not known for any other useful features. While the inhabitants of salt waters are sources of extremely necessary Omega-3 acids, which are needed for the smooth functioning of the heart, the strength of blood vessels, stable brain function and getting rid of bad cholesterol. In addition to this, any (including the so-called red) cod contains tryptophan, which can be converted into serotonin - a “good mood” substance. And the sulfur that this fish contains also improves the condition of nails and hair. Plus, the tenderness, low-fat and anti-allergenic nature of cod meat - all this makes it an ideal component of baby food.

    What kind of cod is called red?

    However, when they see a recipe with the ingredient “red cod”, many people are perplexed: what is it? And this is not due to lack of education! It’s just that by this term different people (and cooks are people too) mean very different fish. The most common option is hoka, also known as bacchus. The fish is widespread in the waters of Tasmania, Australia and New Zealand. It received the title “red cod” due to the fact that when pulled out of the water, its skin turns juicy pink, and sometimes scarlet.

    The second option is a unique, and therefore very expensive fish, which is found exclusively in a small lake in the Murmansk region, it is a unique natural reserve. The lake actually consists of several layers, each of which differs from the others in salinity, and the water of the lower one is also saturated with hydrogen sulfide. The red cod that lives there has adapted to such harsh conditions and learned to live in these waters. However, its population is declining from year to year, since the meat is considered a delicacy. So, if you managed to buy such cod, you can be almost completely sure that you stimulated poachers with your purchase.

    And finally, the third - and most common interpretation of the term “red cod”. Most often, this is the name given to the long-familiar pollock, so if you don’t come across anything “exclusive”, then you can use it for cooking.

    The most common fried version can be made very special

    There are an incredible variety of ways to cook red cod. However, people who prefer it as a second choice love it and often don’t realize that this method of cooking has a lot of different options. For example, the same red cod can be fried in batter - and will greatly surprise and delight those who eat it. For half a kilo of fish, you only need two eggs, a glass of flour and milk, and lemon juice - as much as you like.

    The cod itself must be filleted, washed, dried with a napkin and cut. The resulting pieces are peppered, salted and placed in a saucepan or pan. The processed onions are cut (small ones into rings, large ones into half rings), sprinkled with lemon juice and left to marinate. At this time, the flour is diluted with milk so that the result resembles thin sour cream. The eggs are separated: the yolks are introduced into the dough immediately, the whites are only beaten until a thick, dense foam. Pieces of fish are dipped in the resulting batter and then fried - even a child can handle this! Place the rosy onion on top of the bowl of cod and it’s ready to eat!

    Unusual “oven” recipe

    There are countless options for preparing fish by baking. However, as for the fish called red cod (okay, maybe regular cod), we liked the following method. For each fish you will need one piece of onion, tomato, and sweet pepper. In addition: two tablespoons of rice, 3 cloves of garlic, a little butter, and salt, pepper and other spices to taste.

    If you follow our recommendations, red cod in the oven will turn out tender, but will not fall apart, and its taste will amaze everyone who has a chance to try it. Onion - in half rings, garlic - through a crush, pepper - in cubes or strips, tomato - in small cubes. The entire vegetable mixture is fried in vegetable oil, and boiled rice is added to it. The resulting composition is put into washed, dried and rubbed with pepper and salt cod, and the belly is pinned with toothpicks or sewn up. The fish is placed on a greased sheet, painted with mayonnaise on top and sent to the oven to bake until a beautiful crust forms. This red cod, baked in the oven with various pleasant additions, will surely please both you and your guests.

    Norwegians know a lot about cod!

    And it is understandable - this is the most common fish in the fjords! So it would be wise to take advantage of their experience. They have their own idea of what red is, and any variety of it is suitable. For example, there is an absolutely simple, but very refined and pleasant dish. For one fish carcass you will need a bottle of unfortified red wine, an onion or two, seasonings and breadcrumbs. The washed and gutted cod is cut into portions, the fins with the head are either left on the ear or donated to the cat. Onions are laid out in a deep bowl (as always, in half rings), on top - fish, which is then salted, peppered and supplied with other seasonings, if you have provided them, after which the container is filled with wine. After eight hours, when the pieces are marinated, they are removed from the marinade, rolled in breadcrumbs and fried. The remaining marinade is strained and boiled down by about three times. If you need it, dilute it with some water (if salty) or, on the contrary, add what is missing. Pour this sauce over the finished fish - you can't imagine anything better.

    Marinated fish

    Marinating cod is generally popular. Here is another recipe that does not require wine: an onion, a carrot, a tablespoon of flour and two tomato paste, a glass of water, parsley, dill, peppercorns and salt to taste. Sautéed vegetables are combined with finely chopped herbs, paste, flour, salt and peppercorns. All this is mixed and boiled over low heat for about five minutes. Then pieces of cod fried in the traditional way are placed in a saucepan (the marinade is enough for one and a half kilograms of fish), and the entire contents are simmered under the lid for a quarter of an hour. Then it is infused for the same amount of time, not on the fire and not covered. Very unusual and attractive taste!

    This article will talk about how to cook cod in a frying pan. This fish is inexpensive and therefore very popular among the people. But if salmon or salmon is difficult to spoil even for a novice cook, then with cod the situation is different. Low-fat fish may turn out dry after frying. Another pitfall that cod can bring to the cook is that it will hopelessly stick to the bottom of the pan and crumble into mush. In addition, it has a pronounced fishy taste and smell, which not everyone likes. But if you know some secrets and culinary techniques, you can prepare delicious dishes from cod. These subtleties include marinating and dipping in batter. You should also follow the sequence of actions when heat treating the product. Below are recipes for fried cod dishes.

    Preliminary manipulations

    This fish has almost no small bones. Its white meat with a layered structure is very tender in taste. And the low energy value - 69 calories per 100 grams of product - makes this fish one of the components of dietary nutrition. And cod cooks very quickly. If you are tired or don’t have time to stand at the stove, then a steak from this fish will be ready in a quarter of an hour. But before frying cod in a frying pan, you need to take some steps to solve the problems with the excessive dryness of this fish, its tendency to fall apart into pieces and its characteristic odor. If you bought frozen cod, you need to let it thaw gradually. Do not use a microwave or plunge the carcass into boiling water. The smaller the temperature changes, the better the fish will retain its shape in the pan. The melted ice must be drained and the carcasses dried on a towel.

    Pickling

    The recipe for how to fry cod in a frying pan can easily fit in one line. We clean the fish, gut it, wash it, cut it into pieces, salt it, roll it in flour and place it in hot oil. This is the basic recipe. It is possible that by using it, you will get a simple, but tasty and satisfying dish. But here we will look at various “delights”. And the first of them is pre-marinating. This simple trick will not only help get rid of the fishy smell, but will also add some juiciness to the dry cod. And if you coat the pieces with mayonnaise, then there will be a certain fat content. Take a thick plastic bag without holes, pour kefir, cucumber pickle or just a weak vinegar solution into it. Place the fish pieces. Tie the bag and put it in the refrigerator for an hour. After this, the marinade should be drained and the cod should be lightly dried so that during subsequent frying the breading will coat the fish evenly. Moreover, then it will not stick.

    How to fry cod in a frying pan correctly

    There are two main ways to prepare this fish. The first of them is quick frying in batter over high heat. The second can be called stewing. Pieces of fish are first fried until a crust forms, and then, as a rule, after adding vegetables, they are simmered under a lid over low heat. The second method results in juicier and more tender cod. Frying pan recipes often indicate what marinade to prepare and what breading to use, but are completely silent about the utensils. But this is the key to success or failure. The frying pan must be cast iron. Only in it will the fish warm up evenly. As an exception, it is allowed to use a Teflon-coated frying pan. The frying pan must be thoroughly heated. To cook cod in a frying pan, it is best to use a mixture of oils - butter and vegetable, in a one to one ratio.

    Just fried fish

    Cod should not be cut into very large pieces - up to three centimeters. This is the only way the fish will be thoroughly fried. What kind of breading does cod like? Frying pan recipes advise using only wheat flour. Breadcrumbs, firstly, clog the taste of the fish, and secondly, they are too heavy and fall off, tearing the delicate skin off the carcass. Pour the flour into a bag, put the cod pieces in there and shake to wrap evenly. There should be enough oil for the fish to be half-immersed in it. There is no need to cover the pan with a lid - you should allow excess moisture to escape. In the first five minutes you should not turn the fish over. Only after this time should you use a wooden spatula to lift the edge of the piece and, if it is browned, turn it over on the other side. After another five minutes, you need to turn off the heat and cover the pan with a lid - this way the cod will not dry out and will remain juicy.

    Recipe one: fish in cheese batter

    For this dish, it is best to use cod fillet. Heat the oil mixture in a frying pan. Salt and pepper the defrosted fillet. In a bowl, mix 50 grams of grated hard cheese and a chicken egg. Pour flour into a small bag and roll our fish in it. As soon as a fragrant smoke begins to rise above the oil, dip the fillet pieces into the egg-cheese mixture, and then immediately quickly place them in the frying pan. Fry for five minutes on each side until an appetizing golden brown crust forms. You can do it in the reverse order: first dip the fish in the egg-cheese mixture. Mix flour with pepper, salt and dried herbs. Bread the cod fillet and place it in heated oil. Before serving, sprinkle with chopped onions and lightly sautéed until soft.

    Recipe two: cod in green breading

    Here's another way to fry cod in a frying pan. First, prepare the marinade. Mix olive oil, a little lemon juice and some finely chopped dill and parsley. Soak the prepared cod pieces in this marinade for about an hour. After this we make the breading. Finely chop fresh parsley and dill (about a bunch) and grind with a small amount of olive oil. Roll each piece of fish in breading and fry on both sides for five minutes. Place the cod on paper napkins to drain the fat. Fry the finely chopped onion in the same oil. Pour in half a glass of heavy cream, simmer a little until thick. Season with a teaspoon of mustard and mix. Serve the fried fish, pouring this sauce over it.

    Moroccan recipe

    How to cook cod in a frying pan in the spirit of the exquisite East? First, marinate the pieces of fish finely cut into strips in milk for one to two hours. Heat a frying pan, pour a teaspoon of salt, half this amount of nutmeg, a pinch of cumin, and four peppercorns onto it. Hold, stirring, for two minutes. Pour into a mortar and grind, then mix the spices with half a glass of flour. Roll the cod removed from the milk in this breading and fry it in vegetable oil for ten minutes. Prepare the sauce separately. Finely chop two cloves of garlic and simmer for five minutes in butter over medium heat. Serve with garnish and a slice of lemon.

    To eliminate the unpleasant odor, large pieces of fish should be marinated. For this you can use white wine, lemon juice or cream, kefir. In a bowl, mix a teaspoon of tarragon, marjoram, ginger, black pepper and salt. Bread the steaks in this so that they are covered with a crust of spices. Heat a cast iron frying pan with olive oil, lay out the pieces of fish so that they do not touch each other. Fry for five minutes on each side. Then we put out the fire and leave the steaks to “reach condition” for another quarter of an hour. The recipe for how to cook cod in a frying pan can be varied by replacing the breading with batter. Beat the egg with a fork with a pinch of salt. Add a little flour to make a liquid dough, like pancakes. Dip the steaks into the batter and fry until crisp on both sides.

    Stewed fish

    Another interesting way to cook cod in a frying pan is to pre-fry it and then simmer under the lid over low heat. We bring to your attention a simple recipe. Sour cream will add tenderness to the dish and prevent the fish from drying out. Cut a kilogram of cod into small pieces, sprinkle them with salt, and leave for a quarter of an hour. Peel the onion, cut into half rings, fry in vegetable oil until golden brown. Dip the fish in flour and add to the frying pan. When the pieces of cod are covered with a crust, pour a glass of low-fat sour cream over everything. Salt to taste, sprinkle with a pinch of pepper. Cover with a lid, reduce heat and simmer for about twenty-five minutes. Cod in sour cream in a frying pan is ready! It is recommended to serve the dish with fresh herbs and a quarter of a lemon.

    You can make a lot of healthy and tasty dishes from cod fillets in the oven. This product does not need to be cut; it cooks quickly, which makes the housewife’s work easier in the kitchen. When cooked correctly, slightly dry cod becomes tender and juicy.

    Cod baked in the oven in sour cream can turn out too dry and bland only if the recipe and cooking technology are violated. Knowing how to bake it correctly, you will never encounter such a situation.

    • The fresher the cod and the less frozen it is, the juicier the dish made from it. Therefore, when choosing a product, you should pay attention to the date of manufacture and the thickness of the ice glaze.
    • Fish should be defrosted at room temperature. This will take a lot of time, but in the end you will get a more juicy dish than cod defrosted in the microwave.
    • To reduce the content of certain mineral salts in fish, which in large quantities are not very healthy and can give the dish a bitter taste, the thawed carcass can be placed in milk for an hour or two. However, there is no great need for this.
    • Even if you do everything correctly, but overcook the fish in the oven, it will end up tough and dry. Therefore, the cooking time indicated in the recipe should not be exceeded.
    • Cod is not a very oily fish, so with sour cream it turns out especially tasty. Moreover, the fattier the sour cream, the tastier and more tender the baked cod will be. It will be even better if you marinate the fish before cooking.

    It is necessary to follow the technology for cooking cod in the oven, but this is not enough for the finished dish to have an impeccable taste. The choice of spices and herbs is also of great importance. White and black pepper, thyme, rosemary, parsley, dill, and basil go well with fish. Lemon zest also adds a pleasant aroma to the dish.

    How to cook tasty fillet

    Before cooking, the fish must be defrosted; it is advisable (and best) to do this in the refrigerator in advance. In extreme cases, at room temperature. I had cod fillets from the Barents Sea in a package from Agama, as in the photo, indeed, as stated by the manufacturer, without an ice glaze. After thawing, the cod fillet remained firm and white with a slightly pink tint.

    Before cooking, the cod fillet must be salted (I used coarse sea salt) and poured over the marinade. I prepared the fish marinade from vegetable oil, lemon juice, grated garlic and aromatic herbs.

    I salted the cod and poured the marinade directly into a deep baking dish. This way there will be less dirty dishes, and the fish will remain juicy when baked.

    The marinated cod should sit for at least 15 minutes. If you want to serve this dish hot when guests arrive, you can marinate it in the refrigerator for much longer and put it in the oven at the appointed time.

    Baked cod fillets will cook very quickly in the oven. Temperature in a preheated oven 170−180 degrees, cooking time 15−17 minutes.

    While the cod fillet is baking in the oven, prepare a sauce for serving the fish from fresh tomatoes, garlic and herbs. Chop the washed tomatoes into cubes, chop the fresh herbs with a knife, and grate the garlic. We combine them in a deep cup, season with lime juice, olive oil, spices and oregano. Delicious vegetable sauce made from fresh tomatoes is ready!

    We transfer the cod pieces to a dish, I had 4 fillets, just enough for 4 people. Place aromatic fresh tomato sauce on top of the tender baked fillet and serve the delicious dish to the table.

    I think you will like this simple and quick recipe for cooking cod in the oven or any other sea fish.
