The composition and benefits of nut milk, its use in cosmetology; recipe how to make a drink at home. Nut milk is a source of calcium How to make nut milk at home

Hazelnut nut milk is a healthy and tasty alternative to animal milk. Made at home from two basic ingredients: hazelnuts and purified drinking water, milk does not contain preservatives and sugar, has an incredibly appetizing creamy taste with nutty notes, and looks just like regular milk, even milk foam is formed when whipped. With external similarities, hazelnut milk boasts a whole range of useful vitamins and trace elements in its composition. However, in order to preserve all the beneficial properties of the drink, nuts for making milk must be used raw, not previously fried. For the same reason, nut milk is recommended to be prepared in small portions and stored for no more than 3 days.

In its most basic form, hazelnut milk has a neutral flavor. This option is universal, and if you want to diversify the taste of the drink - just add a little dates, carob or cocoa, salt, spices, honey or other sweeteners to your liking.

To make milk from hazelnuts, you will need: hazelnuts and purified drinking water.

Also, if desired, a little ground cinnamon, salt or sweetener can be added to the finished milk to taste.

Soak nuts in cold water for 8-10 hours. During the infusion process, the nuts will absorb some of the water, so it is better to use purified drinking water for both cooking and soaking.

Rinse the infused, softened and enlarged nuts thoroughly and strain.

Place the nuts in a blender bowl, pour in 400 ml of drinking water and beat all 3-4 minutes.

If the blender is not very powerful - first add 150-200 milliliters of water to the nuts and beat for 2-3 minutes. When the nuts are ground to a state of fine crumbs, add the remaining water.

In the process of whipping, the mixture will turn white and a lush “milk foam” will appear on the surface.

Strain the milk through cheesecloth or a thin cloth. Squeeze the remaining nut cake, save and use in salads, smoothies and baking.

If desired, add a little salt to the finished milk (so the milk will be a little more like regular milk) or a pinch of ground cinnamon, any sweetener to taste - for a sweet version of the drink.

Hazelnut milk is ready. Store the drink in the refrigerator in a clean, airtight container for up to 3 days.

Cow's milk is not always well absorbed by the human body. This is especially true for the elderly and young children (which is why most milk formulas are made on the basis of goat or soy milk). In addition, according to the book "", cow's milk protein can be the cause of some autoimmune diseases.

Walnut kernels contain fatty oil (up to 60-76%), proteins (up to 21%), carbohydrates (up to 7%), provitamin A, vitamins K and P, amino acids (asparagine, cystine, glutamine, serine, histidine, valine, phenylalanine). Walnut fatty oil consists of glycerides of linoleic, oleic, stearic, palmitic and linolenic acids.

During the manufacture of milk, some of the beneficial properties are lost, but most still remain.

Ingredients:

  • 1 cup shelled walnuts;
  • 3 cups water + water for soaking
  • honey to taste;
  • a pinch of vanilla.

Cooking

Measure the nuts with a glass of any volume and fill with cold drinking water so that it covers the nuts. Leave overnight in the refrigerator. In the morning, take out the nuts, drain the water, pour them into a blender and pour three glasses (the same volume that you used for the nuts) of cold water.

Beat with a blender for several minutes until smooth and strain through cheesecloth. After that, you can add a little honey and vanilla to taste, or you can leave it clean. Shelf life - 2-3 days in the refrigerator.

Based on this milk, you can make very tasty cocktails! The first option: beat it with a banana, dates (3-4 pitted things), a pinch of cinnamon and honey. The second option: whisk together with cinnamon, nutmeg, honey and dates (5-6 pieces). You can adjust the amount of bananas and dates to your liking.

Another option is to use nut milk as a base for cocktails with frozen berries (whatever you like) and honey, and also add it to coffee. The only but: this milk is not very homogeneous in consistency, when added to coffee it is divided into flakes and does not look very appetizing, so it needs to be stirred well.

Despite the fact that I do not really like walnuts, I liked the milk from them! It has a pleasant taste, the coffee is simply amazing. If you feel like the milk is not rich enough, add less water next time.

And do not forget that this nut milk is very: 100 ml contains 79 kcal. You should not drink it in large quantities, and because nuts are a healthy product, but rather difficult to digest. You don't drink cow's milk, do you?

Next time we will experiment with rice milk and be sure to share the results!

  2. If you do not trust the purity of purchased raw nuts or seeds before making milk out of them at home, For mold removal and bacteria, leave them for 20 minutes in water with the addition of 1 or 2 tablespoons of 3% hydrogen peroxide (for 1 cup of raw nuts). Then rinse well under running water several times. The nuts/seeds can then be soaked. Follow the table below.
Name Soaking time for nuts and seeds
almond 8-12 hours
Brazilian nut 2 hours
hazelnut 2 hours
cashew nuts 2 hours
walnuts 6-8 hours
pecan nuts 24 hours
macadamia nuts 2 hours
green buckwheat 6-8 hours
flax seeds (flax seeds) 4-6 hours
chia seeds 6-8 hours
shelled hemp seeds
(hemp seeds)
no need to soak
unshelled hemp seeds 8-12 hours
pumpkin seeds 4-6 hours
sesame seeds (sesame seeds) 4-6 hours
sunflower seeds 4-6 hours
  1. When soaking, raw nuts/seeds must be completely covered with water as they will dry out. they swell when they absorb water.
  2. If you don't have time or can't use the soaked nuts/seeds right away, they can be left in the water in the refrigerator for a few days, but you need to change the water every day. This will keep them fresh and ready to use for several days.
  3. After the soaking time is over, the nuts/seeds should be washed well and the water in which they were soaked should be discarded. Never use water in which nuts/seeds have been soaked. It contains enzymes that are harmful to us, which were “pulled out” from the nuts during the soaking process. Removing these enzymes reduces the acidity and specific bitterness, and makes the nuts/seeds easier to digest.

This method will give a completely different flavor to your milk. Don't use coconut oil. It solidifies when cooled and can form small grains in the milk.
  9. You can sweeten or add flavors already directly to the milk, after straining and removing the pulp.
  10. When you make nut milk, after straining through a sieve gauze or special bag for nut milk nut pulp remains. Do not rush to throw it away! You can use walnut pulp for bread, crispbread, if there is no time to make cookies, then you can add it to salads - extra fiber will never hurt anyone. Especially for diabetics! 😉
